Winter leftover rice can be stored for a few days

Winter leftover rice can generally be stored for 1 day at room temperature, and for about 3 days under refrigeration conditions. The storage time of leftover rice is mainly affected by factors such as storage temperature, sealing degree, initial pollution degree, environmental humidity, and repeated heating times. When the room temperature is low in winter, the growth rate of bacteria slows down, and unsealed leftover rice may maintain its quality for about 24 hours in an environment below 15 degrees Celsius. Rice should be covered with plastic wrap or sealed in a box to prevent moisture loss and cross contamination. Starch based foods may produce resistant starch during the cooling process, and repeated heating can lead to nutrient loss. It is recommended to consume them in a single heat after packaging. If the rice has a sour, sticky or yellowish color, it indicates the growth of pathogenic bacteria such as Bacillus cereus, which cannot be completely killed by heating. People with weakened immune systems who consume spoiled rice may experience symptoms of food poisoning such as vomiting and diarrhea. When rice is found to have clumped and hardened or has mold spots on the surface, it should be discarded for disposal.

It is recommended to pack the leftover rice into shallow containers while it is still hot, cool it to below 60 degrees Celsius, and then refrigerate it to reduce condensation. Before consumption, it should be thoroughly heated to a center temperature of over 70 degrees Celsius, paired with fresh vegetables and protein foods to ensure nutritional balance. Control the amount of cooking in a single session and try to finish it within 24 hours.
