Why does lemon water taste bitter when soaked in water

The bitterness of lemon soaked in water is usually related to the lemon variety, treatment method, or soaking time. The main influencing factors include residual skin oil, unremoved fruit pits, high water temperature, prolonged soaking, and variety differences.

1. Skin oil residue

Lemon skin contains natural volatile oil substances, especially bitter components that are prone to accumulate in the pits of the fruit stem and peel. When not thoroughly cleaned, these oils dissolve in water and can cause a bitter taste. It is recommended to scrub the skin with salt or soak it for a short period of time to remove any residue.

2. Kernel not removed

Lemon seeds contain glycosides such as limonin. If the kernel is not removed during slicing, prolonged soaking will release bitter components. It is recommended to use the fruit pulp after removing the core to reduce the release of bitterness.

3. High water temperature

High temperature can accelerate the dissolution of substances such as hesperidin in lemon peel, and hot water above 80 ℃ can easily stimulate bitterness. It is recommended to use 40-60 ℃ warm water for brewing, which can retain vitamin C and avoid excessive leakage of bitter substances.

4. Soaking for too long

The naringin and other components in lemon peel gradually release over time, and the bitterness increases significantly after more than 2 hours. Freshly brewed and consumed can control bitterness, and it is recommended to store in refrigeration for no more than 4 hours.
