The main production areas with good quality of shiitake mushrooms in China are Suizhou in Hubei, Qingyuan in Zhejiang, Gutian in Fujian, Xixia in Henan, and Shangluo in Shaanxi. Due to suitable climate and mature cultivation techniques, these regions produce thick and fragrant shiitake mushrooms.

1. Suizhou, Hubei
Suizhou is known as the hometown of shiitake mushrooms in China. It is located in the hinterland of Dahong Mountain, with a large temperature difference between day and night and moderate humidity, which is conducive to the accumulation of shiitake polysaccharides and flavor substances. The local oak cultivation technique is used to produce mushrooms with round and round flower shapes, naturally cracked mushroom caps, and rich selenium elements. After stewing, the taste is smooth, tender, and fragrant.
2. Qingyuan, Zhejiang
As the birthplace of artificially cultivated shiitake mushrooms in the world, Qingyuan has a planting history of more than 800 years. The local area adopts the high shed layer frame cultivation method, combined with water quality irrigation from the source of the Oujiang River. The mushroom stems are short and thick, and the gills are dense. After drying, the aroma substances can be retained more, making it particularly suitable for making dried mushrooms.
3. Gutian, Fujian
The rotation mode of Tremella fuciformis and shiitake mushrooms in Gutian is unique. The shiitake mushroom caps cultivated using cedar sawdust as the culture medium are tea brown in color and have scale like patterns on the surface. As it is located in Wuyi Mountains, more foggy days slow the growth of lentinus edodes, and the accumulated guanylic acid content is higher, with more delicious substances.

4. Xixia mushroom in Henan Province
Xixia mushroom adopts bag cultivation technology, using oak wood chips from Funiu Mountain area as the substrate, producing mushroom flesh that is dense and elastic. The local winter temperature is lower, and the growth cycle of shiitake mushrooms is prolonged, resulting in higher protein and dietary fiber content than in ordinary production areas. 5. Shangluo, Shaanxi Province Shangluo is located at the southern foot of the Qinling Mountains, with a high altitude and high forest coverage. The shiitake mushrooms produced in Shangluo have obvious high-altitude characteristics. The temperature difference between day and night promotes the formation of chapped patterns on the cap. The content of polysaccharide is much higher than that in plain areas, which is particularly suitable for Tonic Diet conditioning.
When purchasing, you can observe whether the mushroom cap is intact, whether the mushroom folds are white and tight, and high-quality dried mushrooms should have a strong natural aroma. Daily storage should be kept dry and ventilated, avoiding mixing with strongly scented food. When soaking hair, it is recommended to use warm water and keep the soaking solution, which contains a large amount of umami substances dissolved. Mushrooms are rich in fungal polysaccharides and ergosterol, which help regulate immunity, but gout patients need to control their intake. Paired with high-quality protein ingredients such as chicken and tofu, it can better enhance their nutritional value.
