What should I do if peanuts are damp and not crispy

When peanuts become soft due to moisture, crispness can be restored by baking, microwave heating, freeze-drying, sealing in Baijiu, drying in the sun, etc. Peanut moisture is mainly related to factors such as high humidity in the storage environment, poor sealing, and prolonged storage time.

1. Bake

Spread damp peanuts flat on a baking tray and place them in a preheated oven at 150 degrees Celsius for about 10 minutes. High temperature can effectively evaporate the internal moisture of peanuts and restore their crispy texture. During the baking process, it is necessary to flip it every 3 minutes to avoid local burning. This method is suitable for large-scale processing and can preserve the original aroma of peanuts.

2. Microwave Heating

Take an appropriate amount of peanuts and place them in a specialized container for microwave ovens. Heat on medium high heat for 30 seconds, then remove and flip them, repeating 2-3 times. Microwaves can cause water molecules to move vigorously, generating heat and quickly removing moisture. Note that the heating time should not be too long, otherwise it may cause peanut carbonization. Spreading it out for heat dissipation after heating can improve the effect.

3. Freeze drying

Put peanuts into sealed bags and lay them flat in the freezer compartment of the refrigerator. The water will gradually sublime in a low-temperature environment. After 24 hours, take it out and let it stand to warm up. Freeze drying can maximize the preservation of peanut nutrition and original flavor. This method is particularly suitable for peanuts that have not been stripped of their red clothes, as low temperatures can also delay oil oxidation.

4. Sealing of Baijiu

Pour a small amount of high Baijiu into the bottom of the storage container, pad it with kitchen paper, and then put peanuts into it for sealing. Alcohol evaporation will absorb environmental moisture, and peanuts can regain their crispness after 3-5 days. It is better to choose pure grain Baijiu with a temperature above 50 degrees. This method has insect prevention and bacteriostasis effects and is suitable for long-term storage.

5. Sun drying

On sunny days, spread the peanuts on a bamboo sieve and let them air dry in a well ventilated area for 4-6 hours. Ultraviolet radiation can kill bacteria and mold, while natural air drying can prevent high temperatures from damaging nutrients. When drying, it is necessary to cover it with gauze to prevent dust, flip it once per hour, and store it in a sealed container after complete cooling.

It is recommended to store the processed peanuts in a sealed jar or vacuum bag, and adding food desiccants can extend the shelf life. Daily storage should be in a cool and dry environment, avoiding mixing with high humidity ingredients. If peanuts have become moldy or have a rancid taste, they are not edible. The aflatoxin produced by mold is heat-resistant and has strong carcinogenicity. Moderate consumption of fresh peanuts can help supplement high-quality protein, unsaturated fatty acids, and vitamin E, but the recommended daily intake is within 30 grams to avoid excessive intake of fats.
