What is the difference between yellow lemon and green lemon

The main differences between yellow lemon and green lemon lie in maturity, flavor, and usage. Green lemon is an immature lemon with higher acidity and a herbal fragrance; Yellow lemon is a fully ripe fruit with a mild sour taste and rich fruity aroma.

The skin of lime is dark green to yellow green, and the flesh color is light yellow green. The juice is abundant but the skin is thin. Its unique aroma comes from the higher content of citral and linalool, which is suitable for making Hot and sour soup, Dongyingong or direct juice mixing of Southeast Asian cuisine. The vitamin C content of green lemon is slightly higher than that of yellow lemon, but the difference between the two is not significant, both belong to high vitamin C fruits. Immature characteristics make it less resistant to storage, and it is prone to dehydration and wrinkling when stored at room temperature. It is recommended to store it refrigerated.

Yellow lemon has a bright yellow skin and uniform thickness, and a light yellow flesh. After maturity, the acidity decreases and more sugar is produced. It is suitable for baking desserts, pickling candied fruits, or pairing with seafood to remove fishy odors. Fully ripe yellow lemon has a higher content of pectin and is often used to make jam or lemon curd. It can be stored for a long time in a dry environment at room temperature, but it should be consumed as soon as possible after cutting to avoid oxidation. The nutritional components of the two are similar, but the carotenoid content of yellow lemon is slightly higher, and the antioxidant substances such as hesperidin in the peel are more abundant.

Daily consumption can be chosen according to taste preferences. Green lemon is suitable for dishes that require a prominent sour flavor, while yellow lemon is more suitable for mildly flavored drinks or desserts. Both should be avoided from consuming large amounts on an empty stomach, and those with excessive stomach acid should control their intake. When storing, pay attention to checking whether the fruit peel is moldy. After juicing, it can be frozen into ice cubes to extend its use time. Lemon peel is rich in aromatic oil and can be dried for use in brewing tea or cooking to enhance its aroma.
