In Guangdong, everyone likes to cook meat by soaking it. For example, dipping lean meat, dipping chicken, dipping Rice-meat dumplings, so the "dipping" is to use the waste heat of soup to cook meat. It's a bit similar to the "virtual steaming" used when steaming fish, which can make the meat just cooked without aging and maintain its original flavor.
