What color of honey jujube is of good quality

Jujubes have the best quality with deep reddish brown color, oily and glossy skin. High quality honey dates are mainly characterized by uniform color, plump flesh, sweet and fragrant aroma, no impurities or mold, and soft and glutinous taste.

1. Uniform color

Mature honey jujubes, after being sugar soaked, present a bright reddish brown color with uniform color distribution and no mottled spots. If there is local blackening or whitening, it may be due to improper storage causing mold growth or sugar analysis. Natural dried jujubes will retain the original texture of the fruit, while artificially dyed products will have overly bright and dull colors.

2. Full flesh

High quality honey jujubes have a thick and full body, and can feel elasticity when squeezed. Poor quality products often become shriveled and wrinkled due to excessive dehydration, or the fruit pulp becomes loose due to soaking in expansion agents. The cross-section should be semi transparent amber color, with even sugar penetration and no hard core.

3. Sweet and fragrant

High quality jujube emits a rich jujube aroma mixed with honey sweetness, without any sour or burnt odor. Products smoked with sulfur may have a pungent chemical odor, and improper storage over a long period of time can produce a lees smell. The natural sugar soaking process will fully transform the aroma substances, forming a unique caramel flavor.

4. No impurities or mold

The surface should be clean and free of foreign objects such as sand and insect eggs, and the fruit stem should not be rotten or blackened. Crystallization of frosting is a normal phenomenon, but if white mycelium or gray mold spots appear, it has deteriorated. The packaged product needs to be observed for any abnormal exudate or clumping.

5. Soft and Glutinous Taste

When chewing, the flesh should be soft and tough, with sugar and pectin forming a palatable viscosity. Poor quality products may be dry and hard to chew or too soft and rotten, and some products with added alum may have a bitter taste. High quality honey dates have a moderate sweetness that is not too harsh to the throat, and have a unique sweet and mellow aftertaste reminiscent of jujubes.

When selecting, it is recommended to choose packaging products from legitimate channels and pay attention to checking the production date and shelf life. Loose honey dates need to be observed for dry and hygienic storage environment. It is advisable to control the daily consumption of 5-8 pills, and patients with diabetes should be cautious. Seal and avoid light during storage, and refrigerate to delay sugar crystallization. Pairing with ingredients such as walnuts and Tremella fuciformis can enhance nutritional value, but it should not be consumed with high protein foods to affect digestion and absorption.
