High quality shiitake mushrooms have the characteristics of thick mushroom caps, tight gills, fragrant aroma, natural color, and moderate dryness. When selecting, pay attention to details such as appearance, smell, and texture, and avoid choosing products that are moldy or damp.

1. Thick mushroom cap

The mushroom cap of high-quality mushrooms usually presents a full hemispherical or umbrella shape, with uniform thickness and intact edges without defects. The surface of the cap should have a natural luster, ranging from light brown to dark brown in color, and may have subtle scale like textures on the surface. The diameter of the mushroom cap is generally between 3-8 centimeters, and mushrooms that are too large may have an older texture. The edge of the cap should naturally curl inward, and if fully unfolded, it may become overripe.

2. Tight gills

Flip the shiitake mushrooms and observe the gills. The gills of high-quality shiitake mushrooms are arranged neatly and tightly, appearing white or light yellow. 5. Moderate dryness

When high-quality dried shiitake mushrooms are gently broken, they should have a crisp sound and a neat cross-section. If you feel damp, soft or difficult to break, it may be due to improper storage and moisture. After soaking, dried shiitake mushrooms should regain their full form, with a flexible and chewy texture.

When purchasing shiitake mushrooms in daily life, priority should be given to products with organic certification or clear origin markings. Dry shiitake mushrooms should be sealed and moisture-proof when stored, and fresh shiitake mushrooms are recommended to be refrigerated and consumed within 3-5 days. Before cooking, dry shiitake mushrooms should be soaked in warm water at around 30 ℃ for 1-2 hours. The soaking water can be retained for use as a broth. Mushrooms are rich in polysaccharides, B vitamins, and minerals, making them suitable for various cooking methods such as soup making and stir frying.
