Tofu blanched in cold water or hot water

It is generally recommended to use hot water for blanching tofu. Hot water blanching can better remove bean odor, maintain the integrity of tofu shape, shorten cooking time, enhance the delicacy of taste, and reduce nutrient loss. When blanching tofu in hot water, it is more appropriate to control the water temperature at 80-90 degrees Celsius. Cut the tofu into pieces and put them in hot water. Blanch for 30 seconds to 1 minute before removing. High temperature can quickly solidify the surface protein of tofu, forming a protective layer to prevent fragmentation, while promoting the release of active substances such as soy isoflavones. Hot water can effectively dissolve oxalic acid and phytic acid in tofu, reduce interference with mineral absorption, and retain more high-quality protein and calcium. Immediately supercooling after blanching can enhance elasticity and is suitable for cold mixing or stir frying.

Cold water blanching tofu is suitable for situations where the bean odor needs to be completely removed, but it takes a long time and can easily cause the tofu to loosen. Put tofu and cold water into a pot at the same time, slowly heat over low heat until slightly boiling, and then remove. This method can fully dissolve odorous substances, but some water-soluble vitamins may be lost with water, and the texture of tofu may also become rough. Blanching old tofu or frozen tofu in cold water can restore its fluffy texture, making it suitable for stewing dishes. After blanching tofu, it should be cooked promptly to avoid prolonged soaking. Choose the appropriate water temperature according to the dish requirements. Tender tofu should be blanched in hot water first, while old tofu can be slowly boiled in cold water. Eating vegetables rich in vitamin C can increase iron absorption rate. For those with gastrointestinal sensitivity, it is recommended to thoroughly heat tofu before consumption. Pay attention to alternating the intake of soy products and other protein foods in daily diet to ensure nutritional balance.
