There are several methods for storing green beans

The main storage methods for green beans include refrigeration, freezing, sun drying, pickling, vacuum sealing, etc.

1. Refrigeration

Fresh beans can be sealed in a fresh-keeping bag and stored in the refrigerator compartment. It is recommended to control the refrigeration temperature at around 4 degrees Celsius to avoid frostbite caused by excessively low temperatures. Refrigeration can maintain the moisture and taste of the beans, suitable for short-term storage of 3-5 days. Note that there is no need to clean before refrigeration, as surface moisture can accelerate spoilage. If black spots or softening are found on the surface of the beans, they should be discarded immediately.

2. Freeze

Wash and blanch the beans for 2 minutes, then supercool them. Drain the water and pack them in a sealed bag for freezing. Blanching water can destroy oxidase activity, maintain color and nutrition. Frozen storage can last for 6-8 months and is suitable for long-term preservation. After thawing, it can be cooked directly, but the taste will be slightly soft. Before freezing, it is important to ensure that the beans are completely dry to prevent ice crystals from damaging the cell structure.

3. Sun drying

Select intact and insect free beans, boil them in boiling water for 1 minute, and then air dry until completely dehydrated. During the sun drying process, it is necessary to avoid rainwater and dew, and it takes 5-7 days for it to remain sunny. Dried beans can be stored in breathable cloth bags in a cool place, with a shelf life of about 1 year. Soak for at least 4 hours before consumption to restore moisture, suitable for stewing and cooking dishes. Be careful of mold or odor and discard immediately.

4. Marination

Layer the beans, salt, chili and other seasonings into a sealed container for fermentation, with a salt content of 15% of the weight of the ingredients. After being marinated at room temperature for 2 weeks, it can be refrigerated and stored for 3-6 months. Lactic acid bacteria produced during the pickling process can inhibit harmful bacteria and form a unique flavor. After opening the can, use clean utensils to avoid contamination. 5. Vacuum sealing

Use a vacuum machine to remove the air inside the packaging and seal it. It can be refrigerated for 2 weeks or frozen for 1 year. Vacuum state can effectively block oxygen, delay oxidation and microbial growth. Suitable for storing pre processed blanched beans, and should be consumed as soon as possible after opening. Pay attention to checking the packaging for air leakage, and discard the swollen bag.

Different storage methods are suitable for different needs. Fresh beans contain saponins and plant hemagglutinin, and it is recommended to heat them thoroughly before consumption. Before storage, rotten and spoiled parts should be removed, and all containers should be disinfected before use. Choose the appropriate method according to the consumption plan, and mix refrigeration and freezing to balance convenience and storage time. Regularly check the storage status. If mold, mucus, or odor appears, it should be discarded immediately to avoid gastrointestinal discomfort caused by consuming spoiled beans.
