The three simplest methods to remove hairtail white skin

The simplest methods to remove hairtail white skin include hot water blanching, salt washing, and knife scraping. The white skin on the surface of hairtail is a layer of silver fat, which contains certain nutritional value. However, if you need to remove it for taste or cooking needs, you can refer to the following three easy to operate methods.

1. Hot water blanching method

Soak the hairtail section in hot water at around 80 ℃ for 10 seconds. After the silver fat shrinks due to heat, gently rub it with your hand to remove it. This method can preserve the integrity of the fish meat to the maximum extent possible and is suitable for subsequent steaming or braising methods that need to maintain the integrity of the fish shape. Note that the water temperature should not be too high to avoid scalding the surface fish meat and affecting its taste.

2. Salt Rubbing

Sprinkle salt evenly on the surface of the hairtail and rub it repeatedly along the fish's body in the opposite direction of scale growth. The friction of the salt particles can effectively peel off the silver fat layer. After completion, rinse thoroughly with running water. This method is suitable for frying and cooking fish with low texture requirements, and attention should be paid to the strength during operation to avoid damaging the fish fiber.

3. Scrape off the back of the knife

Use a kitchen knife to tilt the back at a 45 degree angle and scrape from the tail towards the head. The silver grease will roll up and fall off in a flocculent shape. This method requires certain skills, but has high processing efficiency and is suitable for batch processing. It is recommended to place the hairtail on an ice pack to maintain low temperature during operation, which can reduce the emission of fishy odor. After scraping, rinse the remaining debris on the fish body with clean water.

Catfish silver fat contains unsaturated fatty acids and phospholipids, among other nutrients. If there are no special taste requirements, it can be kept for consumption. It is recommended to wear gloves during processing to avoid residual fishy smell. After processing, ginger slices or lemon juice can be applied to the fish body to remove fishy smell. Fresh hairtail has clear and plump eyeballs and bright red gills. Pay attention to observation when purchasing. If you need to completely remove visceral blood lines, you can cut along the abdomen and scrape off the blood stasis on the inner side of the spine with a small spoon. Then soak in light saline water for 10 minutes to remove the fishy smell for better results. Daily storage can be done by drying off moisture and placing it in an ice pack for refrigeration. It is recommended to consume it within 2 days.
