The solution to undercooked meals

The raw rice can be remedied by stewing, microwave heating, steaming, mixing with boiling water, and making Fried Rice. Jiasheng rice is usually caused by insufficient water, uneven heat, differences in rice quality, poor heat transfer of pots, and premature opening of lids.

1. Return to the pot and simmer

Transfer the undercooked rice to the pot, sprinkle a small amount of boiling water evenly, and the amount of water should just submerge the surface of the rice. Cover the pot and simmer over low heat for 10 minutes, using steam to fully absorb water and soften the rice grains. This method is suitable for the situation of undercooked rice, and frequent flipping should be avoided during operation to avoid damaging the structure of the rice.

2. Microwave Heating

Spread the rice flat in a microwave suitable container, spray an appropriate amount of water on the surface, cover with plastic wrap, and make small holes for ventilation. Heat on medium high heat for 2 minutes, then remove and stir. Repeat until the rice is fully cooked. Microwaves can quickly penetrate the interior of rice grains, making them suitable for processing partially undercooked rice, but attention should be paid to preventing excessive evaporation of water.

3. Steaming over water

Place the undercooked rice in a bowl and press it firmly, then place it upside down on the steamer. Keep the bottom of the bowl 3 centimeters away from the boiling water. Steam continuously for 15 minutes to circulate and heat the starch. High temperature and humidity can fully gelatinize the starch. This method can maintain the original shape of rice, especially suitable for the remedy of japonica rice type undercooked rice.

4. Mix with hot water

Slowly pour hot water above 80 ℃ into the undercooked rice, and use chopsticks to loosen it while pouring. The amount of water should be controlled at one tenth of the total amount of rice. After standing for 5 minutes, cover and keep warm for 10 minutes. Hot water will promote the conversion of rice core starch. This method is suitable for situations where there is slight undercooking and quick processing is required, but it may affect the taste of the rice.

5. Making Fried Rice

Stir fried sandwich rice with eggs, vegetables and other ingredients, and improve the texture through high-temperature frying and ingredient moisture. When stir frying, use a spatula to press down on the rice grains to help loosen them, and maintain medium to high heat to shorten the heating time. This method can transform the lamination defect into the graininess required by Fried Rice, and is suitable for indica rice lamination rice with low water content.

To prevent undercooked rice, attention should be paid to controlling the ratio of rice to water. For japonica rice, it is recommended to use a water ratio of 1:1.2, while for indica rice, it should be around 1:1.5. Soak the rice grains for 20 minutes after washing to allow them to absorb water, and avoid frequent lid opening during the cooking process. Use a thick bottomed pot and heat it evenly over low to medium heat. After turning off the heat, continue to simmer for 10 minutes and use the remaining temperature to mature. If the phenomenon of overlapping occurs repeatedly, check the temperature control function of the rice cooker or replace the rice seeds with high starch content. Processed undercooked rice should be consumed as soon as possible to avoid secondary heating affecting digestion and absorption.
