The correct storage methods for peanuts mainly include sealed refrigeration, drying and avoiding light, packaging and freezing, regular inspection, and avoiding high temperatures.

1. Sealed refrigeration

Put peanuts into food grade sealed bags or glass jars, exhaust the air, and place them in the refrigerator compartment. Low temperature environment can delay oil oxidation and maintain the crispy taste of peanuts, which can usually be stored for 3-6 months. Ensure that the peanuts are completely cooled before sealing to avoid mold growth caused by condensation water.

2. Dry and dark

For short-term storage, choose a cool and dry cabinet and use opaque containers to store. Peanuts have a high oil content, and exposure to light and moisture can easily trigger a crackling taste. Food desiccants or unopened tea bags can be added to assist in moisture absorption. It is recommended to consume them within one month at room temperature.

3. Packaging and freezing

Large quantities of peanuts can be packaged into small portions and frozen for storage. They can be stored for 8-12 months at minus 18 degrees Celsius. No need to thaw before consumption, simply bake or stir fry to restore the taste. Freezing can effectively inhibit the growth of Aspergillus flavus and is suitable for long-term storage.

4. Regular inspection

Check the stored peanuts monthly for mold, discoloration, or odor. Mild halal flavor can be removed by baking at 150 degrees Celsius for 10 minutes, but moldy peanuts can produce aflatoxins and should be discarded immediately. Shelled peanuts are more resistant to storage than shelled peanuts.

5. Avoid high temperatures

Peanuts should be kept away from heat sources such as stoves and heaters, and the storage environment temperature should not exceed 25 degrees Celsius. High temperature can accelerate fatty acid decay, leading to a decrease in nutritional value. Fried peanuts are easier to preserve than raw peanuts due to their low moisture content. Fresh peanuts are rich in unsaturated fatty acids and vitamin E, and improper storage can lead to nutrient loss. It is recommended to choose season new peanuts with plump granules and no insect infestation when purchasing, and consume them as soon as possible after opening. It can be paired with oats, chia seeds, and other high protein snacks, or crushed as a cold dish ingredient. If blue-green mold spots are found on peanut shells, it may indicate contamination with aflatoxin and should be stopped from consumption. It is recommended to use dry tableware for daily use to avoid introducing moisture.
