The correct method for storing walnut kernels

The key to storing walnut kernels is moisture resistance, light avoidance, and sealing. They can usually be refrigerated or frozen for 6-12 months. The storage effect is mainly affected by factors such as temperature, humidity, oxidation rate, container sealing, and pest risk.

1. Refrigerate storage

Put walnut kernels into food grade sealed bags or glass jars, exhaust the air, and place them in the refrigerator compartment. Low temperature environment can delay fat oxidation, maintain a crispy taste, and is suitable for short-term consumption within 3-6 months. Be careful to avoid mixing with strongly scented food to prevent cross contamination.

2. Cryopreservation

Divide into small portions and vacuum seal them in aluminum foil bags. Store them in the freezer area of the refrigerator for about 1 year. Freezing can completely inhibit the rancidity of oils and fats, but it should be consumed immediately after thawing to avoid repeated freezing that may cause water crystallization and texture damage. Suitable for large-scale stockpiling.

3. Vacuum treatment

Use a household vacuum machine to remove oxygen from the packaging, and store it in a cool place with a desiccant. The vacuum state can block oxidation reactions and can also be stored for 8-10 months at room temperature. Thick material packaging bags should be used to prevent sharp walnut kernels from puncturing the sealing layer.

4. Moisture proof desiccant

Lay food grade silicone desiccant at the bottom of the storage container, and then seal it with walnut kernels. Desiccants can absorb environmental moisture and are particularly suitable for use in humid areas. Check the discoloration of desiccants every month and replace expired desiccants in a timely manner.

5. Avoid light containers

Choose brown glass jars or opaque ceramic jars for storage to prevent light from accelerating the deterioration of unsaturated fatty acids. The container needs to be disinfected and dried with boiling water first, then filled with walnut kernels and dripped with a small amount of vitamin E capsule solution to enhance the antioxidant effect. Walnut kernels are rich in unsaturated fatty acids, and improper storage can easily produce a rancid taste. Suggest purchasing walnuts with shells, eat and peel them immediately, and package them as soon as possible after peeling the kernels. Daily use follows the principle of first in, first out, and should be consumed within two weeks after opening. If the color darkens, the surface becomes sticky, or there is an odor, it should be discarded immediately. When paired with oats and yogurt, it is recommended to use them immediately to preserve their nutritional value. Regularly check for insect eggs or mold during storage, and strengthen moisture-proof measures during the rainy season.
