When selecting mangosteen, maturity and freshness can be determined by observing the color of the stem, pressing the hardness of the shell, checking the condition of the stem, weighing the fruit, and observing the spots on the shell.

1. Fruit Stem Color
Fresh and mature mangosteen fruit stems are bright green in color. If the stems turn yellow or black, they may have been stored for too long. The number of sepals around the fruit stem is usually 4-8, and the more there are, the more petals there are in the flesh. Avoid choosing mangosteen with dried and fallen fruit stems, as these fruits may have lost moisture.
2. Hardness of fruit shell
Use your thumb to lightly press the outer shell of the mountain bamboo. High quality mountain bamboo should have elasticity and slight rebound. A hard shell indicates incomplete maturity, while a soft shell indicates excessive maturity. Pay attention to the pressure when pressing to avoid pinching the flesh. Mature mangosteen shells have a certain degree of toughness, similar to the texture of fresh longan.
3. Stem state
Observe the short stem connecting the fruit. The fresh mangosteen stem is moist, shiny, and green in color. If the fruit stem is withered and brown, it indicates that the picking time is relatively long. The base of the fruit stalk should not have mold spots or exudate of mucus, as this type of bamboo may have undergone spoilage and deterioration.

4. Fruit weight
The heavier the volume of mangosteen, the fuller the flesh and the higher the moisture content. You can weigh the mountain bamboo in your palm, and high-quality fruits will have a heavy and drooping sensation. Bamboo that is too light in weight may have dried or hollow flesh.
5. Fruit Shell Spots
Brown spots on the outer shell of bamboo are a normal phenomenon, but if the spots are too large or connected in patches, it may indicate internal damage. Avoid choosing mangosteen with cracked or oozing fruit shells. High quality mangosteen with evenly distributed sesame like spots and a deep purple red shell color.

It is recommended to refrigerate the selected bamboo and keep it at a temperature of around 10 ℃ to extend its shelf life. Rinse the outer shell with running water before consumption, and gently press it along the waist to open it. The pulp of mangosteen is rich in vitamin C and dietary fiber, but its sugar content is high. diabetes patients need to control their intake. If you find that the fruit flesh turns yellow and tastes bad, you should stop eating it. Fresh mangosteen fruit flesh is snow-white and has a refreshing fragrance. When storing, pay attention to maintaining ventilation and dryness, and avoid mixing with other strongly scented foods.
