Should peanuts be refrigerated or frozen

It is recommended to refrigerate peanuts for short-term storage, while freezing is more suitable for long-term storage. The storage method of peanuts mainly depends on the storage time, environmental humidity, and frequency of use.

Peanuts contain high levels of oil, and refrigeration can delay oxidation and spoilage, making them suitable for consumption within 1-2 months. When refrigerating, it is necessary to use a sealed container to isolate water vapor, and the temperature should be controlled at around 4 ℃ to avoid mixing with strongly scented food. If the environmental humidity is high, food grade desiccants can be used to absorb moisture before sealing to prevent mold growth or a tough texture caused by moisture.

Cryopreservation can effectively inhibit oil rancidity and is suitable for storing peanuts for more than 3 months. Divide into small portions and seal before freezing to avoid repeated thawing. Freezing will slightly harden the texture of peanuts, and they can be reheated at room temperature or baked at low temperatures to restore their crispness before direct consumption. It should be noted that freezing cannot kill Aspergillus flavus. If there are signs of mold before storage, consumption is prohibited. Regardless of refrigeration or freezing, fresh, dry, and mold free high-quality peanuts should be selected for storage. After opening, consume as soon as possible to avoid nutrient loss. Seal it promptly after daily use and regularly check for any halal odor or discoloration. Paired with vacuum packaging can extend the shelf life, but it is important to note that freezing may cause the packaging to rupture. Special populations such as those with allergies should be cautious when consuming peanut products that have been stored for a long time.
