Should mushrooms be refrigerated or kept at room temperature

Mushrooms are suitable for refrigeration and can be stored at room temperature for short-term use. The preservation method of mushrooms mainly depends on storage time, environmental humidity, and variety characteristics. Fresh mushrooms can extend their shelf life under refrigeration conditions, and low temperatures can inhibit microbial growth and slow down water loss. The vegetable and fruit area of a household refrigerator has high humidity and is suitable for storing common varieties such as shiitake mushrooms and shiitake mushrooms. Before refrigeration, it is recommended to wrap the mushrooms in kitchen paper to absorb excess moisture and avoid condensation of water droplets inside the sealed bag that may cause decay. Some mushroom varieties that are resistant to storage can be temporarily stored at room temperature in a dry and ventilated environment. For example, unopened grass mushrooms can maintain freshness for 1-2 days in environments below 20 degrees Celsius. But the high temperature and high humidity environment in summer will accelerate spoilage, so mushrooms stored at room temperature should avoid direct sunlight and be cooked as soon as possible. Wild mushrooms contain more active substances and are prone to producing toxins when stored at room temperature, so they must be refrigerated.

When storing mushrooms in daily life, attention should be paid to checking for any mucus or odor, as spoiled mushrooms can produce harmful substances. Rinse quickly with running water before cooking, as prolonged soaking can damage flavor compounds. It is recommended to purchase in batches according to the consumption plan, and make mushroom soup or stir fry with other vegetables to maximize the retention of nutrients.
