Should fresh fungus be frozen or refrigerated

It is recommended to refrigerate fresh fungus for short-term storage, and freeze it for long-term storage. The storage method of fresh fungus is mainly influenced by factors such as storage time, consumption plan, moisture control, temperature stability, and nutrient retention.

Fresh Auricularia auricula can maintain good taste and nutrition when stored in refrigeration, making it suitable for short-term consumption. The refrigeration temperature should be controlled between 0-4 degrees Celsius to delay the deterioration of the fungus and prevent moisture loss leading to wilting. Before refrigeration, the surface moisture should be drained and sealed with a fresh-keeping box or bag to prevent cross contamination and bacterial contamination. It is recommended to consume fresh mushrooms stored in refrigeration within 3-5 days, with a taste close to fresh. If the surface of the fungus is sticky or has a strange odor, it should be discarded immediately.

Fresh fungus is suitable for storage for more than a week, but the taste will become soft after thawing. Before freezing, the fungus should be washed and thoroughly drained, and divided into small portions to avoid repeated thawing. The freezing temperature should be below minus 18 degrees Celsius and can be stored for 1-2 months. When thawing, it is recommended to move to the refrigerator and thaw slowly to reduce cell structure damage. Frozen fungus is more suitable for stewing soup or stir frying, and the taste will significantly decrease when mixed cold.

Whether refrigerated or frozen, fresh fungus should be thoroughly cleaned to remove impurities and avoid bacterial growth in humid environments. Regularly check the status during storage, and discard immediately if mold or odor appears. It is recommended to store in batches according to the frequency of consumption to reduce nutrient loss. Vegetables, mushrooms and other ingredients can be paired with daily diet to enrich dietary fiber and mineral intake. People with special physical conditions need to confirm that there are no allergic reactions before consumption.
