Preservation methods for dried shiitake mushrooms

Dried shiitake mushrooms can extend their shelf life through methods such as sealed drying, low-temperature refrigeration, dark storage, regular inspection, and packaged storage.

1. Sealed and Dry

Dried shiitake mushrooms should be placed in a well sealed container, such as a glass jar or food grade plastic box, to avoid contact with air. Food desiccants can be placed inside the container to absorb residual moisture and prevent mold growth. The humidity of the storage environment should be controlled below 60%, and it is recommended to use a vacuum sealing machine for humid areas.

2. Low temperature refrigeration

Unopened dried shiitake mushrooms can be stored in the refrigerator compartment, and maintaining a temperature of around 4 ℃ can effectively inhibit microbial growth. Unopened items should be tightly wrapped in double-layer plastic bags to prevent odor or moisture contamination. Before refrigeration, ensure that the mushrooms are completely cooled to avoid condensation.

3. Avoid light storage

Ultraviolet radiation can accelerate the breakdown of nutrients such as vitamin D in dried shiitake mushrooms, and should be stored in opaque containers or in dark places such as cabinets. If using a transparent container, it is necessary to wrap it with a light shielding cloth or aluminum foil and keep it away from high-temperature light sources such as stoves.

4. Regular Inspection

Every month, check whether the shiitake mushrooms have insect damage, mold spots, or odors. Damp shiitake mushrooms can be spread out and dried or baked in an oven at 60 ℃ for 20 minutes. If local mold is found, it should be immediately removed, and adjacent non moldy parts should also be sealed and stored after high-temperature treatment.

5. Packaging and Storage

Large quantities of dried shiitake mushrooms should be packaged according to the amount used each time to reduce the number of times they are opened. Can be individually packaged in a small sealed bag, labeled with a date, and stored together. Avoid direct contact with hands during packaging, and use dry tableware to reduce the risk of contamination.

When storing dried shiitake mushrooms, attention should be paid to changes in environmental temperature and humidity. It is recommended to increase the amount of desiccant used during the rainy season. If mushrooms become soft, sticky, or have a sour taste, they should be stopped from consumption. Seal it promptly after daily use to avoid mixing with strong smelling ingredients such as seafood. Properly stored dried shiitake mushrooms can maintain excellent quality for more than 12 months. Before soaking, observe for impurities or abnormal colors. When soaking in warm water, caution should be exercised when consuming if oil droplets or turbidity appear on the water surface.
