Mushrooms can generally be stored in refrigeration for 3-5 days, and the actual storage time is affected by factors such as storage method, freshness, packaging conditions, temperature fluctuations, and humidity control.
1. Storage Method
Untreated whole shiitake mushrooms are easily perishable when refrigerated. It is recommended to wrap them in kitchen paper and seal them in a fresh-keeping box. The oxidation rate of sliced shiitake mushrooms is accelerated, and it is necessary to tightly adhere to the surface with cling film to isolate the air. After blanching, draining and refrigerating the mushrooms can extend their shelf life, but the flavor may be partially lost.
2. Freshness
Mushrooms that are refrigerated within 24 hours after harvesting have the best preservation effect, and mushrooms with unopened caps and firm stems are fresher. Pre packaged shiitake mushrooms purchased from supermarkets should be observed for any mucus or odor. Softened shiitake mushrooms are prone to bacterial growth after refrigeration. Wild mushrooms are more prone to spoilage than artificially cultivated ones.
3. Packaging conditions
Vacuum packed shiitake mushrooms can be refrigerated for up to 7 days, while ordinary plastic bags need to be punctured to maintain breathability. Ceramic containers are more conducive to maintaining humidity balance than plastic containers, and the number of layers stacked should not exceed two to avoid pressure damage. Adding a small amount of charcoal or desiccant can absorb excess moisture.
4. Temperature fluctuations
The refrigerator compartment should maintain a constant temperature below 4 ℃. Frequent opening and closing of doors can accelerate temperature changes and decay. Do not store in areas with unstable temperature such as refrigerator door frames, where the temperature is lower near the back wall. It is recommended to lower the refrigerator gear when the ambient temperature is high in summer.
5. Humidity Control
Mushrooms are suitable for storage in an environment with a humidity of 85% -90%. If they are too dry, they will shrink and lose water, and if they are too wet, they will easily mold. The slightly damp gauze inside the fresh-keeping box can adjust the humidity, but it needs to be replaced daily. If mold or sticky spots appear, they should be discarded immediately and the moldy part should not be removed before consumption.
It is recommended to consume it as soon as possible after purchase to ensure the best taste. If it needs to be stored for a long time, it can be blanched and frozen. Regularly check whether the refrigerator sealing strip is aging, and ensure that there is no excess moisture on the surface before refrigerating shiitake mushrooms. When cooking with other ingredients, prioritize using mushrooms that have been refrigerated for a longer period of time. When there is an odor, discoloration or texture change, it should be stopped from consumption, and those with weak gastrointestinal function should pay more attention to the freshness of the ingredients. Reasonably plan the procurement quantity to avoid food waste.
