Method for distinguishing the green color of edamame

The green color of edamame can be judged by observing the uniformity of color, fullness of pods, freshness of aroma, compactness of texture, and the presence of mold spots. Fresh and high-quality edamame usually have a uniform green color, full and non dented pods, a fragrant aroma, a tight texture, and no mold spots.

1. Color Uniformity

High quality edamame pods present a bright green color with uniform color, without obvious yellow spots or blackened areas. If the color of the pods turns yellow or partially darkens, it may be due to prolonged storage or moisture deterioration. The beans themselves should be tender green in color. If the color is dark or white, it may age or lose nutrients.

2. Pod plumpness

Fresh edamame pods are plump and raised, and a light pinch can feel the fullness of the beans. If the pods are dry and sunken, it indicates poor development of the internal beans or loss of water. The surface of the bean pod should be smooth and free of wrinkles, and the stems at both ends should remain green and not wither.

3. Freshness of Odor

Normal edamame has a plant sweet odor. If you smell a sour, moldy, or pungent chemical odor, it may have spoiled or been treated with medication. After peeling off the pods, the beans should emit a faint bean odor rather than fermentation odor.

4. Texture compactness

Fresh bean pods have a firm and elastic texture, and when peeled off, the texture of the beans is firm and not sticky. If the pods are soft and damp or the beans are sticky, bacteria may have already grown. The skin of the beans should be smooth and free of mucus, and there should be a slight rebound sensation when lightly pressed.

5. Mold spot inspection

Carefully inspect the surface and gaps of the pods for white mycelium or black mold spots, as moldy edamame may produce toxins. If brown water stains appear inside the pods, it indicates that they have been eroded by mold and are not edible.

When purchasing edamame, it is recommended to prioritize products with intact pods and bright colors. After purchase, it is recommended to refrigerate and consume within 3 days. Before cooking, it is necessary to thoroughly clean and remove surface impurities. Blanching can help maintain the emerald green color. People with spleen and stomach deficiency and cold should control their consumption and avoid raw food to prevent gastrointestinal discomfort. If there is discoloration or odor during storage, it should be immediately discarded and no longer consumed.
