White vinegar is not always blended. There are both brewed and formulated white vinegar available on the market. The production process of white vinegar mainly includes two methods: traditional fermentation and modern industrial preparation, and there are differences in its composition and flavor.

Traditional brewing of white vinegar is made from grains such as rice and glutinous rice, through natural fermentation processes such as saccharification, alcohol fermentation, and acetic acid fermentation. This type of white vinegar contains a small amount of fermentation products such as amino acids and organic acids, with a soft sour taste and a grain aroma. Zhenjiang fragrant vinegar and Shanxi aged vinegar in China are all types of brewed vinegar, and some brands also produce brewed white vinegar. The white vinegar produced by the brewing process usually has the raw materials and brewing words clearly marked on the label.

The preparation of white vinegar is mainly made from edible glacial acetic acid, with the addition of water and food additives. This type of product has lower production costs, a single sour stimulation, and lacks fermentation flavor. According to national standards, vinegar must be labeled with the word 'preparation'. Some low-priced white vinegar may not have clearly labeled the process, and consumers can judge by checking whether it contains glacial acetic acid in the ingredient list.

When choosing white vinegar, there are three points to note: check the product standard number. Brewing vinegar is generally GB/T18187; Observing the ingredient list, the raw materials for brewing vinegar are only grains and water; Shake the bottle behind you, and the brewing vinegar foam is delicate and durable. In daily use, it is recommended to choose brewed white vinegar for cold dishes to enhance flavor, and it can be used to prepare white vinegar for cleaning and disinfection purposes. Special populations such as those with excessive stomach acid should control their intake of white vinegar and avoid drinking it on an empty stomach.
