Is soybean milk poisonous if it is not cooked

Soybean milk may be toxic if it is not cooked. Uncooked soybean milk contains trypsin inhibitors, saponins and other harmful substances, which may lead to nausea and vomiting and other toxic reactions.

When soybean milk is not heated sufficiently, trypsin inhibitor in it will interfere with protein digestion and absorption, which may cause gastrointestinal discomfort. Saponins may stimulate the mucosa, causing a burning sensation in the mouth and esophagus. These substances will be destroyed under continuous boiling, but soybean milk is prone to false boiling, and the actual temperature may be insufficient when the surface bubbles.

Some people may have hemolytic reaction after drinking uncooked soybean milk, especially children or those with weak digestive function. The phytohemagglutinin in raw soybean milk may also cause red blood cell aggregation, which may affect oxygen transport in serious cases. This type of toxic reaction usually occurs when consumed in large quantities or ingested for a long time.

It is recommended to keep soybean milk boiling for more than 5 minutes to ensure safety, and avoid using microwave oven for short-term heating. Self made soybean milk needs to be fully stirred to prevent uneven heating. Before drinking, it can be observed whether there is no beany smell. Gastrointestinal sensitive persons or children can give priority to commercially sterilized soybean milk products, and pay attention to the diversity of daily diet to reduce the risk.
