How to store walnut kernels for the longest time

The longest preservation methods for walnut kernels mainly include freezing, sealing and avoiding light, drying and moisture-proof, vacuum packaging, and low-temperature refrigeration.

1. Cryopreservation

Put the walnut kernels into a food grade sealed bag or preservation box, exhaust the air, and place them in the freezer compartment of the refrigerator. Walnut kernels can be stored for more than a year in a frozen state and can effectively prevent oil oxidation and deterioration. Thaw at room temperature before consumption, and the taste and nutrition are basically not affected. Be careful to avoid repeated thawing and freezing, and use as needed each time.

2. Seal and avoid light

Use opaque sealed cans or aluminum foil bags to package walnut kernels and store them in a cool place. Sealing can isolate oxygen and moisture, avoid light energy, and delay the photo oxidation reaction of unsaturated fatty acids. This method can be stored at room temperature for 3-6 months and is suitable for short-term storage. Food desiccants can be placed inside the container to enhance moisture resistance.

3. Dry and moisture-proof

The humidity of the storage environment should be controlled below 60%, as moisture can cause walnut kernels to mold. Walnut kernels can be stored together with unopened food desiccants, or baked in an oven at 50 ℃ for 10 minutes to remove moisture before sealing. Regularly check for moisture and clumping, and handle any abnormalities immediately.

4. Vacuum packaging

uses a vacuum machine to remove the air inside the packaging and seal it, which can isolate oxygen to the greatest extent possible. Vacuum packed walnut kernels can be stored for 8-12 months at room temperature, and the effect is even better when combined with refrigeration. Pay attention to choosing a thick and puncture resistant vacuum bag, and avoid sharp objects piercing and causing air leakage during packaging.

5. Low temperature refrigeration

Unopened walnut kernels can be stored in the refrigerator compartment for 6-8 months, and the temperature should be maintained at 0-4 ℃. Refrigerated environment can inhibit microbial growth, but attention should be paid to sealing to prevent cross contamination. It is recommended to pack opened walnut kernels into small portions and refrigerate them to reduce temperature and humidity changes caused by frequent use. Walnut kernels are rich in unsaturated fatty acids and vitamin E, and improper storage can lead to a rancid or moldy taste. In addition to the above methods, it is recommended to choose intact and undamaged walnuts for self peeling when purchasing, which is fresher than pre packaged products. The best strategy is to purchase in small quantities multiple times and consume as soon as possible. Before consumption, pay attention to whether there is any discoloration or odor. Rotten walnut kernels can produce harmful substances such as aflatoxin, and should not be continued to be consumed. Walnut kernels can be used daily to make nut flour, baked food or with oatmeal Congee, which can not only prolong the shelf life but also enrich the diet.
