Longan can be preserved for a longer period of time through methods such as refrigeration, freezing, cool and ventilated storage. There are mainly methods such as low-temperature refrigeration, branch removal and quick freezing, drying treatment, vacuum packaging, and cool room temperature.

1. Low temperature refrigeration
Place fresh longan in a fresh-keeping bag to remove air and place it in the refrigerator compartment at 4 degrees Celsius. Refrigeration can inhibit microbial growth, maintain fruit moisture, and can usually be stored for 5-7 days. Be careful to avoid mixing with other strongly scented foods to prevent cross flavors from affecting the taste.
2. Branch removal and quick freezing
Remove the fruit stalks and place them flat on a tray for quick freezing. After complete freezing, transfer them to a sealed bag for freezing storage. Longan can be stored for 2-3 months in a frozen state, and after thawing, the flesh will be slightly soft but the sweetness remains unchanged. Suitable for making desserts or stews in the future, it is not recommended to eat fresh directly.
3. Drying treatment
Peel and remove the core of longan, then place it in a dryer or a sunny and ventilated place for dehydration. After drying, longan can be stored at room temperature for more than 6 months. The drying process concentrates sugar, making the flavor more intense, but some thermosensitive nutrients such as vitamin C may be lost.

4. Vacuum packaging
uses a food grade vacuum machine to remove air from the packaging, isolate oxygen, and delay oxidation and deterioration. Vacuum packaged longan with a shell can be kept fresh for 10-15 days under refrigeration conditions, suitable for commercial transportation or gift packaging, and should be consumed as soon as possible after opening.
5. Room temperature cool
Untreated longan with branches can be hung in a cool and ventilated place, maintaining an ambient humidity of about 60% and avoiding direct sunlight. This method can only be stored for 2-3 days and is suitable for short-term storage. It is necessary to check and remove rotten fruits daily to prevent cross contamination.

When storing longan, priority should be given to high-quality fruits with hard and intact shells. Different storage methods can be used in combination. It is recommended to perform pre cooling treatment before refrigeration or freezing to avoid frosting caused by temperature differences. Before consumption, pay attention to observing for any abnormal conditions such as mold growth and fermentation. Regular ventilation during storage can effectively reduce the probability of decay. For processed longan products, they should be sealed to prevent moisture and labeled with a shelf life.
