How to store green chili peppers for a long time

Green chili peppers can be stored for an extended period of time through refrigeration, freezing, air drying, oil immersion, vacuum sealing, and other methods.

1. Refrigerate

Wash and dry the green chili peppers, put them in a fresh-keeping bag, remove the air from the bag, seal the bag tightly, and store them in the refrigerator for about a week. Controlling the refrigeration temperature at 4-8 degrees Celsius can effectively delay the decay of chili peppers. It is important to avoid contact with other vegetables with high moisture content to prevent moisture and mold growth.

2. Freeze

Remove the stems and wash the green chili peppers, then cut them into pieces or lay them flat on a tray for freezing. Once completely frozen, transfer them to a sealed bag and store them for up to 3 months. Freezing will soften the texture of chili peppers, making them more suitable for later use in stir frying or stewing. After thawing, they should not be eaten raw.

3. Drying

Select intact and undamaged green chili peppers, hang them with cotton thread, place them in a ventilated and dry place, and dry them in the shade. After complete dehydration, seal them in a can and store them for six months. During the drying process, it is necessary to avoid direct sunlight and regularly flip to prevent local mold growth. The color of the finished product will turn dark green.

4. Oil immersed

Cut the green chili into slices and put them together with garlic and spices in a sterilized glass bottle. Pour in cooking oil that has completely soaked the ingredients and seal it. Refrigerate and store for 2 months. Oil immersion can isolate air and inhibit bacterial growth. Using olive oil or rapeseed oil is more effective, and clean utensils should be used when taking it.

5. Vacuum sealing

Use a vacuum machine to remove air from the packaging bag and seal it. refrigerated storage can be extended to 10 days, and frozen storage can last up to 6 months. Vacuum treatment can minimize oxidation reactions and is suitable for large-scale storage. It is necessary to ensure that the packaging bag is not damaged or leaking. When storing green chili peppers, priority should be given to selecting fresh fruits with smooth skin and fresh green stems. Different storage methods can be used in combination. Short term storage is recommended to be refrigerated or oil immersed, while long-term storage is recommended to be frozen or air dried. Regardless of the method used, it is necessary to regularly check for signs of mold growth. If there are any soft rot, white mold, or other issues, they should be immediately discarded. Before consumption, observe whether the color and odor are normal, and avoid repeated thawing or opening and closing of containers during storage. Reasonable storage can not only extend the shelf life of green chili peppers, but also maximize the retention of their nutritional components such as vitamin C and capsaicin.
