How to store eggs for a longer period of time

Eggs are prone to spoilage at room temperature, and proper storage can extend their shelf life. The main methods to extend the storage time of eggs are refrigeration, keeping them dry, avoiding cleaning, placing them with the blunt end facing up, and storing them separately.

1. Refrigerated storage

Placing eggs in the refrigerator compartment is the most effective way of storage. The refrigerator temperature remains stable at around 4 degrees Celsius, which can significantly inhibit bacterial growth. Eggs can be stored in this environment for 4-5 weeks. It is recommended to use original paper boxes when refrigerating to avoid absorbing odors inside the refrigerator. Do not store eggs on the refrigerator door rack, as frequent temperature fluctuations caused by opening and closing the door can accelerate spoilage.

2. Keep dry

A humid environment can damage the natural protective film on the surface of eggs. When storing, ensure that the container is dry and ventilated. Kitchen paper can be placed under the egg tray to absorb moisture. If water droplets are found on the surface of the eggshell, they should be immediately wiped dry and the storage container replaced. During the rainy season or in humid areas, it may be considered to place food desiccants in storage boxes.

3. Avoid cleaning

Fresh eggs have a natural antibacterial film on their surface, which can be damaged by washing. Store directly after purchase and clean before cooking. If the eggshell has been contaminated with feces or other dirt, it can be gently wiped with a dry cloth. Eggs that must be washed with water should be used immediately and cannot be stored for a long time.

4. Blunt end facing upwards

The egg sac is located at the blunt end and placed upwards to keep the yolk centered and delay spoilage. When storing, use a dedicated egg box with grooves to ensure that each egg is securely in place. After long-distance transportation, the orientation of the eggs should be checked and the blunt end should be readjusted upwards.

5. Store eggs separately.

Eggs should be kept away from strongly scented foods such as onions and garlic. Eggshells are breathable and can easily absorb odors, leading to changes in flavor. Secondary packaging can be done in sealed boxes, but ventilation holes need to be left. Cracked eggs should be immediately removed and stored separately to prevent contamination of other eggs.

In addition to proper storage, it is recommended to choose fresh eggs with clean surfaces and no cracks when purchasing, and pay attention to checking the production date. During high temperatures in summer, the storage time should be shortened, and refrigerated eggs should be consumed within 2 hours after being taken out. Boiled eggs and other cooked eggs need to be refrigerated and stored for no more than 3 days. Regularly check the stored eggs, and discard them immediately if the egg white becomes thin, the yolk is flattened, or emits a strange odor. Reasonably control the purchase quantity, and it is recommended to purchase for 2 weeks each time for daily household consumption.
