Birthday cakes can be refrigerated and stored overnight, but it is important to seal and prevent moisture, as well as avoid cross flavored foods. The main storage methods include covering with plastic wrap, using cake boxes, controlling the refrigeration temperature, avoiding repeated thawing, and packaging for preservation.
1. Cover with cling film
Wrap the surface and sides of the cake tightly with cling film to reduce air contact. Cream cakes need to be supported with toothpicks before being covered with film to prevent cream from sticking. If it contains fruit decoration, you can first use kitchen paper to absorb the surface moisture and then wrap it to avoid accelerated deterioration caused by water vapor.
2. Using an original cake box
is the best choice, as the bracket inside the box can prevent deformation due to compression. No original box available, sealed container with lid, bottom cushion with baking paper to prevent moisture. Placing food desiccants inside the box can extend the storage time, but direct contact with the cake body should be avoided.
3. Refrigeration temperature control
It is recommended to keep the temperature in the refrigerator compartment at 2-4 degrees Celsius. If it is too high, it can easily breed bacteria, while if it is too low, it can cause the cream to harden. Do not place it on the refrigerator door frame, as it has large temperature fluctuations and is easily affected by the opening and closing of the door. Milk fat cream cake should be stored for no more than 24 hours, and animal cream is recommended to be consumed within 12 hours.
4. Avoid repeated thawing
After being taken out of refrigeration, it should be consumed within 1 hour, as secondary refrigeration will accelerate spoilage. If you need to consume it in portions, it is recommended to cut it into pieces and package it separately before the first storage. The cake with ice cream interlayer must be frozen and cannot be frozen again after thawing.
5. Packaging and Storage
Large sized cakes can be cut and sealed for storage, reducing overall exposure during each use. Wrap each piece with tin foil and put it in a fresh-keeping box. Warm it back for 10 minutes before consumption for better taste. Mousse cakes need to be kept at low temperature and immediately refrigerated after packaging.
Before consuming cakes stored overnight, check for any odors or mold, and prioritize removing fruit decorations. Dairy cake is recommended to be fully heated overnight before eating, and diabetes patients should control their intake. In high temperature environments during summer, it is not recommended to store for more than 8 hours even if refrigerated. If the cake contains fresh ingredients such as tiramisu, it must be refrigerated within 4 hours and not exceed a shelf life of 12 hours. For long-term storage, freezing can be chosen, but the taste will significantly decrease. Thawing should be done slowly in the refrigerator.
