How to stir up Fried Rice one by one

The key to the effect of Fried Rice is rice pretreatment and temperature control. There are mainly methods such as using overnight rice, loosening rice, controlling oil temperature, stir frying techniques, and adding ingredients step by step.

1. Choose overnight rice

After the water evaporates, the rice grains become drier and less likely to stick when stir fried. Fresh rice has a high moisture content and is prone to clumping when cooked directly. Fresh rice can be spread flat and cooled, then placed in the refrigerator for at least 2 hours to allow the starch to regenerate and harden. When refrigerating rice, it is recommended to cover it with plastic wrap to prevent cross contamination. After taking it out, gently rub it off with your hands before putting it into the pot.

2. Loose Rice Processing

Before cooking, thoroughly break the rice to avoid clumping. Use chopsticks or a rice spoon to loosen the refrigerated rice and open up any clumps. When stir frying, use a spatula to lightly press the rice grains on the back, and use a shaking motion to evenly heat the rice grains. Never use a shovel to cut and stir fry, as it can easily damage the integrity of the rice grains.

3. Oil temperature control

When the oil in the pot is slightly smoking, pour in rice. High temperature can quickly evaporate residual water. Use vegetable oil with a high smoke point, such as peanut oil, and pour it in twice more evenly. First, pour in half of the oil to moisten the pot, then add the rice and pour the remaining oil along the edge of the pot, wrapping each grain of rice with a thin oil film to prevent sticking to the pot.

4. Stir fry technique

Keep the heat at medium high and quickly flip the rice grains, using the throwing method to make them fly and scatter. Use your wrist to push the rice forward and quickly pull it back, then use a shovel to flip it up from the bottom. After 30 seconds of frying, adjust the low heat, gently press the adhesion with the shovel back, and repeat the action of throwing the pan until the rice grains are clear.

5. Step by step addition of ingredients

Egg, vegetable and other ingredients need to be processed in stages. First, stir fry the egg mixture, then stir fry the side dishes until fragrant, and finally mix the rice and ingredients. Vegetables with high water content, such as green beans, need to be blanched in advance to avoid the rice becoming sticky due to water leakage. Finally, pour the seasoning along the edge of the pot, and quickly mix well after the high temperature stimulates the aroma.

After Fried Rice is finished, sprinkle chopped green onion to increase fragrance, and match with light soup to balance the taste. For daily cooking, it is recommended to use non stick pans to reduce oil consumption and control salt intake. People with weak gastrointestinal function should avoid consuming hard rice grains, and the refrigeration time of rice can be shortened to 1 hour. Pay attention to ventilation during the frying process, as the oil fumes generated by high temperatures may irritate the respiratory tract. Try different grains such as brown rice, quinoa, etc. to replace white rice and increase dietary fiber intake.
