How to stir fry regular scrambled eggs

Stir fried eggs are a simple and easy to make home cooked dish, with the key being the control of heat and seasoning techniques. The main methods for stir frying regular eggs include hot pot and cold oil, mixing the egg mixture, moderate seasoning, controlling the heat, and quick stir frying.

1. Hot Pot and Cold Oil

Before stir frying eggs, the pot should be heated and edible oil should be poured in. The oil temperature should not be too high. Adding cold oil to the pan can prevent the egg mixture from instantly solidifying and sticking to the pan, while also ensuring even heating of the eggs. 2. Egg mixture mixing

Adding salt too early can cause the egg mixture to release water. If you like the freshness, you can add a few drops of cooking wine, but avoid using dark seasonings such as soy sauce that can affect the color.

4. Control the heat

When pouring the egg mixture, maintain a medium heat and turn to low heat after the edges have solidified. Excessive heat can cause eggs to become burnt and hard, while insufficient heat can lead to excessive water loss. The ideal state is to start stir frying when the surface is slightly solidified, at which point the eggs can maintain a tender, smooth, and juicy taste.

5. Quickly stir fry

Use a spatula to quickly push and stir fry from the edge to the center, with a light and smooth motion. The stir frying time should be controlled within 20 seconds, and the heat can be turned off when the eggs are in a large, fluffy shape. Using residual heat to completely solidify the inside, the outer layer of the scrambled egg is fragrant and tender, while the inner layer is smooth and silky, avoiding overcooking that can cause dryness and hardness.

Stir fried eggs can be paired with rice, noodles, or served with bread. It is recommended to use fresh eggs, and refrigerated eggs should be reheated before cooking. According to personal taste, ingredients such as scallions and tomatoes can be added, but it is important to note that the ingredients should be stir fried until half cooked in advance. Keep the cookware clean during the cooking process, and wipe the bottom of the pot after each stir fry to avoid coking substances affecting the next use. It is recommended to consume 1-2 eggs per day in daily diet, paired with vegetables and fruits to ensure a balanced nutrition.
