How to remedy the wet egg Fried Rice

If the egg Fried Rice is too wet, it can be remedied by re frying, adding dry ingredients, adjusting the temperature, etc. Excessive moisture may be caused by the rice not being drained, excessive oil content, or the ingredients flowing out of the water. Specific measures should be taken based on the specific reasons.

Stir frying is the most direct remedy. Pour the wet and soft egg Fried Rice back into the pot, turn on the high heat and stir quickly to evaporate the excess water. During the stir frying process, a spatula can be used to press the rice to help the water vapor dissipate. Be careful to avoid using non stick pans, as iron or cast iron pans have better thermal conductivity for water evaporation. Continue stir frying until the rice grains are distinct and there is a slight burnt aroma at the bottom of the pot, then turn off the heat. Adding dry ingredients can absorb excess moisture and enhance taste. During the frying process, a small amount of corn starch or breadcrumbs can be sprinkled and quickly stir fried evenly. Starch based ingredients can adsorb surface moisture, but the amount should be controlled within one tenth of the volume of rice. You can also add crushed seaweed, roasted nuts, or stir fried sesame seeds, which can absorb water and add flavor layers. If the rice becomes damp due to vegetable water, you can stir fry some dehydrated mushroom cubes or dried radish to balance the humidity. Adjusting the fire temperature and feeding in batches can prevent moisture retention. Fried Rice needs to be kept in a medium high fire throughout the whole process, so that the ingredients can be quickly dehydrated in contact with high temperature. Eggs should be stir fried until fully cooked before mixing with rice to avoid adding moisture to the raw egg mixture. High water content side dishes such as tomatoes, cucumbers, etc. need to be stir fried separately and then mixed. When using overnight rice, it is necessary to knead the clumps by hand in advance. After taking out the refrigerated rice, let it sit and warm it up to reduce condensation. Add salt in small amounts during the frying process to avoid salt causing the vegetables to release water.
