Quick peeling of corn kernels can be achieved through methods such as freezing, microwave heating, knife assisted methods, fork scraping, and half cutting.
1. Freezing Method
Place the entire corn in the freezer compartment of the refrigerator and freeze for about 2 hours. After removal, the corn kernels will separate from the corn cob due to low-temperature shrinkage. Gently twist them by hand to make the corn kernels fall off. The freezing method is suitable for use when a large amount of corn needs to be processed, and the peeled corn kernels have high integrity, but the time needs to be planned in advance.
2. Microwave heating method
Microwave heat corn with husk for 30 seconds to 1 minute. The high temperature evaporates the water at the connection between the corn cob and the particles. After taking it out, hold the two ends of the corn and twist them in the opposite direction. The corn kernels will fall off in rows. This method is efficient and can retain corn juice, but caution should be taken to prevent burns.
3. Knife assisted method
Use a knife to cut a row of corn kernels along the longitudinal direction of the corn to form a gap, and then use the back of the knife or spoon to push and scrape horizontally from the gap. The corn kernels can be peeled off in pieces. This method is suitable for novice kitchen workers, but the force needs to be controlled to avoid cutting the corn cob and affecting subsequent peeling.
4. Fork Scraping Method
Fix cooked corn upright and use metal fork teeth to scrape longitudinally along the corn grain. The fork teeth can accurately insert into the gaps between the grains and the core to pry out complete grains. This method is easy to obtain and not prone to splashing, but it is more suitable for soft corn varieties.
5. Half Cut Method
Use a knife to horizontally cut corn into two sections, with the section facing downwards, and strike them on a cutting board. Vibration will cause the corn kernels to loosen and fall off from the cut. This method is simple and fast to operate, but some bottom particles may require secondary treatment.
It is recommended to wear anti slip gloves to protect your fingers when processing corn. Before peeling fresh corn kernels, blanch them in water for 1 minute to enhance their toughness. The peeled corn kernels can be packaged and frozen for storage. For stir frying, it is recommended to thaw and drain first. For making salads, frozen granules can be used directly to maintain crispness. Corn cob can be used to make broth or cut into pieces as compost material, achieving zero food waste.
