How to preserve pre made fungus that cannot be eaten

If the prepared fungus cannot be consumed in one go, it is recommended to store it in a sealed refrigerator or freeze it. Short term storage can choose refrigeration, while long-term storage is more suitable for freezing. The main influencing factors include storage temperature, sealing, humidity control, storage container, and storage time.

When storing in refrigeration, the fungus should be drained of water, placed in a fresh-keeping box or sealed bag to remove air, and placed in a refrigerator compartment at around 4 ℃. refrigerated state can maintain the crispy and tender taste of black fungus for about 2-3 days, and avoid repeated removal during this period, which may cause temperature differences. Be careful not to add seasoning before refrigeration to prevent accelerated spoilage. If there is an increase in mucus or abnormal odor, it should be immediately discarded.

Cryopreservation is suitable for situations where storage is required for more than three days. Divide the fungus into small portions and lay them flat in a sealed bag. Squeeze out the air and place them in a -18 ℃ freezer. Freezing can cause changes in the cell structure of Auricularia auricula. After thawing, the taste is slightly softer but the nutrients can still be retained. When using, simply take out the required amount, soak in cold water and thaw before cooking. The freezing storage period can reach one month, but it is recommended to consume it within two weeks to maintain the best flavor. Regardless of the storage method used, it is necessary to ensure hygienic conditions during the processing. Wash your hands thoroughly before coming into contact with fungus and use disinfected containers and tools. Regularly check the condition during storage, and discard any signs of deterioration such as stickiness, discoloration, or odor. It is recommended to blanch before consuming again, which can restore some taste and kill bacteria. It is recommended to soak the fungus reasonably according to the actual consumption amount, and eating it immediately can ensure nutrition and safety.
