How to preserve peeled durian meat

It is recommended to refrigerate or freeze the peeled durian meat. Specific methods include sealed refrigeration, vacuum packaging, freezing into chunks, making desserts, and low-temperature thawing.

1. Sealed refrigeration

Put durian meat into a sealed fresh-keeping box or bag, try to exhaust the air as much as possible, and then refrigerate. The refrigeration temperature should be controlled at around 4 degrees Celsius and can be stored for 2-3 days. After refrigeration, the flesh of durian will become slightly softer, but the flavor will be more intense. Be careful to avoid mixing with other strongly scented foods to prevent cross contamination.

2. Vacuum packaging

Using a vacuum sealing machine to package durian meat can effectively isolate oxygen and extend the shelf life to 5 days under refrigeration conditions. It is recommended to divide each serving according to the single consumption amount to avoid repeated thawing. The oxidation rate of durian meat significantly slows down after vacuum packaging, which can better maintain its original texture and aroma.

3. Freeze into chunks

Remove the core from the durian flesh and lay it flat on plastic wrap. Wrap it into independent small pieces and place them in the freezer. The freezing temperature should be below minus 18 degrees Celsius and can be stored for 1-2 months. Freezing can alter the softness and texture of the fruit pulp, making it more suitable for making ice cream or baked goods. Before consumption, it is necessary to transfer it to the refrigerator and slowly thaw it.

4. Making Desserts

Mix fresh durian meat into a paste, and mix it with light cream, milk, etc. to make durian mousse or pudding. Refrigerate and store for 3-5 days. Sugar and dairy products can help stabilize the texture of durian. Durian cakes and other Dim sum baked at high temperature can be stored at room temperature for 2-3 days. This method can effectively extend the consumption cycle.

5. Low temperature thawing

Frozen durian meat should be moved to the refrigeration room 12 hours in advance to avoid rapid thawing at room temperature, which may cause water loss. The thawed durian should be consumed on the same day and cannot be frozen again. If the fruit pulp is found to be sour or has an alcoholic taste, it should be discarded immediately, as this is a sign of spoilage.

When storing durian, attention should be paid to container sealing, and it is recommended to consume it within 48 hours for refrigerated storage to ensure the best flavor. Frozen durian is more suitable for cooking, as the flesh becomes soft and tender after thawing. Regardless of the storage method used, it is important to ensure cleanliness and hygiene during the operation to avoid bacterial contamination. If the flesh color darkens, produces an odor or mucus, it indicates that it has spoiled and is not edible. Durian has a high sugar content. People with diabetes should control their consumption, and obese people should also pay attention to their intake.
