How to preserve ginger with mud for a long time

Ginger with mud can be stored for a longer period of time, usually 1-2 months. The key to extending storage time is to maintain a dry, cool, and ventilated environment, avoiding moisture and high temperatures.

Adding a mud layer can naturally protect ginger blocks and reduce water loss, but it is important to note that the soil should not be too wet. Unclean ginger with mud can be directly spread out in bamboo baskets or cardboard boxes, placed in a cool place at 12-15 ℃, and regularly inspected to remove sprouted or moldy individuals. If the environmental humidity is high, dry sand or sawdust can be used to cover the ginger chunks and absorb excess moisture. If long-term storage is required for more than 2 months, cellar storage method can be tried. Select undamaged ginger chunks and bury them in layers of dry fine sand, with each layer having a thickness of about 3-5 centimeters. Store them in a constant temperature environment such as a basement or cellar. This method can be stored for 3-5 months, but it needs to be checked once a month to remove the rotten parts in a timely manner. Ginger with mud should not be refrigerated, as low temperature and high humidity environments can easily cause frostbite or mold growth.

When using ginger with mud in daily life, it is recommended to break it into small pieces as needed and keep the remaining mud layer intact. During storage, avoid contact with oil or chemical cleaning agents, and regularly observe whether the surface of ginger chunks has soft rot or black spots. If the plan is to consume it in the short term, it can be washed, dried, sliced, and frozen, but the flavor may be slightly lost. For sprouted ginger chunks, the sprouts can be removed and continued to be used, but the nutritional value and spicy taste will be reduced.
