How to preserve fresh persimmon cakes

Fresh persimmon cakes can be stored through methods such as refrigeration, freezing, drying, and sealing. Specific methods include room temperature ventilation storage, refrigeration storage, freezing storage, vacuum packaging storage, and sun drying storage.

1. Room temperature ventilation storage

Fresh persimmon cakes can be stored at room temperature ventilation for short-term consumption. Spread the persimmon cakes flat in a bamboo sieve or breathable container, and place them in a cool and ventilated place, avoiding direct sunlight and humid environments. When kept at room temperature of 15-20 degrees Celsius, it can be stored for 3-5 days. Be careful to store separately from other fruits to prevent ethylene from accelerating spoilage.

2. Refrigerated storage

can be used to extend the shelf life. Put the persimmon cake into a food grade fresh-keeping box or wrap it with plastic wrap, and place it in the refrigerator compartment at 4-6 degrees Celsius. Refrigeration can inhibit microbial growth and can be stored for up to 7-10 days. Before taking it out for consumption, it is necessary to restore it to room temperature to avoid low temperatures affecting the taste.

3. Cryopreservation

It is recommended to use freezing for long-term storage. Wrap the persimmon cakes individually with tin foil or plastic wrap and place them in a sealed bag. After exhausting the air, place them in a freezer below -18 degrees Celsius. It can be stored for 2-3 months in a frozen state. When thawing, it is necessary to transfer it to the refrigerator in advance and slowly warm it back up to avoid texture changes caused by excessive temperature differences.

4. Vacuum packaging preservation

Batch preservation can use vacuum packaging technology. Use a professional vacuum machine to remove air from the packaging bag and seal it to isolate oxygen and moisture from contact. Vacuum packaged persimmon cakes can be stored for 15-20 days in a cool environment, and can last for more than a month if refrigerated. After opening, it should be consumed as soon as possible.

5. Sun drying preservation

The traditional sun drying method is suitable for making persimmon cakes that are resistant to storage. Slice the peeled persimmons and expose them to sunlight for 3-5 days, flipping them regularly until the moisture content is below 20%. Completely dry persimmon cakes can be stored at room temperature for more than 6 months in ceramic jars or sealed bags, with the addition of food desiccants. Before consumption, they should be soaked in water to soften.

The appropriate method for storing persimmon cakes should be selected according to actual needs. Pay attention to moisture and ventilation during short-term storage, and it is recommended to freeze or dry for long-term storage. All storage methods must ensure that the container is clean and dry, and regularly check for mold. Before consumption, observe whether the color and odor are normal. If there is any odor or mold, it should be discarded immediately. With nuts, yogurt and other foods, it can enrich nutrition intake, but diabetes patients need to control consumption.
