The key to long-term preservation of dried Sichuan peppercorns without losing their flavor lies in moisture resistance, light avoidance, and sealing. There are mainly methods such as low-temperature drying storage, vacuum sealing storage, small portion packaging storage, adding desiccants storage, and regular inspection storage.

1. Low temperature dry storage
Dry Sichuan peppercorns in a sealed container and place them in the refrigerator compartment. Low temperature environment can effectively inhibit mold growth. The volatile substances in Sichuan pepper have significantly reduced activity below 10 ℃, which can delay the loss of fragrance. Food grade absorbent paper can be placed inside the container to absorb residual moisture and prevent clumping and spoilage. When storing in refrigeration, it is important to avoid mixing with strongly scented foods to prevent cross contamination and affect the original flavor of Sichuan peppercorns.
2. Vacuum sealed storage
Using a vacuum machine to evacuate the air inside the packaging bag and seal it can isolate the oxidation effect of oxygen on the aromatic components of Sichuan pepper. The main flavor compounds of Sichuan pepper, such as limonene and linalool, can remain stable for more than 12 months under vacuum conditions. Choose aluminum foil composite bags with a thickness exceeding 0.1 millimeters for vacuum treatment to improve their light shielding performance. If not used up after opening, it is necessary to vacuum again to ensure preservation effect.
3. Divide into small portions for storage
Divide the large packaging of dried Sichuan peppercorns into small sealed cans according to the amount used each time, reducing air contact caused by frequent opening and closing of the main container. 5. Regular inspection and storage
Check the status of Sichuan peppercorns in the storage container every month. If the color darkens or the aroma weakens, it should be dealt with in a timely manner. Normal dried Sichuan peppercorns should maintain a reddish brown appearance and a distinct numbing aroma. If white mold spots or a crackling smell appear, they should be discarded immediately. When checking, take a small amount of Sichuan peppercorns and rub them with your fingers. High quality Sichuan peppercorns should have a crisp sound and not stick to your hands. When stored for more than a year, it is recommended to replace the Sichuan peppercorns in batches to ensure flavor.

In addition to the above storage methods, when using dried Sichuan peppercorns in daily life, attention should be paid to keeping the tools used dry and clean, and avoiding the introduction of water vapor. Before cooking, Sichuan peppercorns can be roasted at low temperature for 3-5 minutes to restore their aroma, but the temperature should not exceed 60 ℃. Choosing intact, undamaged, and fragrant Sichuan peppercorns from the same year when purchasing is more conducive to long-term storage. If the storage capacity is large, consider storing Sichuan pepper in layers with Sichuan pepper leaves, as the antioxidant substances in the leaves can assist in preservation.
