When storing dried lychee, it should be sealed against moisture and light, and can be refrigerated or frozen to extend its shelf life. Mold growth is mainly related to factors such as humidity, temperature, containers, insect infestations, oxidation, etc.

1. Humidity control
Dried lychee has low moisture content but is prone to moisture absorption, so it needs to be placed in a dry environment. Food desiccants can be stored in layers with dried lychee, or regularly dried to remove moisture. It is recommended to store in a dehumidifier box in humid areas of the south to avoid mold growth caused by excessive air humidity during the rainy season.
2. Temperature Management
Temperatures above 25 ℃ can accelerate mold growth. Short term storage can be stored in a cool and ventilated place, while long-term storage is recommended to be refrigerated. Freezing storage can last for more than six months, and the room temperature should be warmed up before consumption. Repeated thawing may cause frosting and should be avoided.
3. Sealed containers
Glass jars or food grade plastic boxes are superior to plastic bags, and air is expelled before sealing. Vacuum packaging can isolate oxygen and microorganisms. If ordinary containers are used, they can be lined with moisture absorbing paper and sealed with rubber bands to prevent air leakage.

4. Insect Control
Rice weevils and other pests can carry fungal spores. Before storage, they can be heated in a microwave for 30 seconds to kill the eggs. Natural spices such as Sichuan peppercorns and cinnamon are stored together in gauze bags, which can not only repel insects but also avoid cross flavors.
5. Isolation of oxygen
oxidation will accelerate quality deterioration. Nitrogen can be used to replace packaging or drop a small amount of high Baijiu for sterilization. Divide into small portions to reduce the number of openings, keep the tool dry when using, and avoid water vapor entering the container.

After daily use, dried lychee should be sealed in a timely manner and regularly checked for mold or sour taste. When pairing with ingredients such as goji berries and red dates, they should be stored separately as mixing different dried fruits can easily lead to cross contamination. Slight mold allergy occurs and the entire batch is discarded. High temperature steaming cannot completely remove fungal toxins. Well preserved dried lychee can be stewed with Tremella fuciformis and lotus seeds, or consumed directly as a snack. It is recommended to consume no more than 20 grams per day to avoid overheating.
