How to make peanuts with crispy texture

The key to making peanuts crispy lies in controlling the heat, pre-treatment, and storage methods. There are mainly methods such as low-temperature slow frying, salt water soaking, re frying to shape, sufficient cooling, and sealing to prevent moisture.

1. Low temperature slow frying

Peanuts need to be cooked in cold oil and kept on low to medium heat throughout the process. Excessive oil temperature can cause external coking and internal growth. It is recommended to use peanut oil or rapeseed oil, and the oil level should completely cover the peanuts. During the frying process, keep flipping until the peanuts turn slightly yellow and make a dense crackling sound. Turn off the heat and continue frying until golden brown using the remaining heat.

2. Salt water immersion

Soak peanuts in light salt water for 10 minutes and then drain to remove surface dust and allow peanuts to absorb moisture, creating an internal and external humidity difference. During frying, water evaporation can form a loose structure. After soaking, it is important to thoroughly air dry or wipe off surface moisture to avoid oil splashing during frying.

3. Double Fry and Shape

First fry until slightly yellow, then remove and let it stand for 3 minutes to allow heat to evenly penetrate, then quickly fry again in the pot for 10 seconds. This intermittent heating method can fully extract the internal oil, forming a honeycomb like crispy structure in the peanuts. After re frying, they should be immediately spread out to dissipate heat.

4. Fully cool

The fried peanuts should be spread flat on kitchen paper to absorb oil, and placed in a ventilated area to cool naturally to room temperature. Under high temperature conditions, moisture is still evaporating inside peanuts, and premature sealing can cause water vapor to soften. Gently shake the container to help dissipate heat and avoid the accumulation of water vapor.

5. Sealed and moisture-proof

Fully cooled peanuts should be placed in glass jars or iron boxes, and food desiccants should be added to isolate them from the air. The storage environment should be protected from light and moisture, and should be consumed within a week after opening. If it becomes soft due to moisture, it can be baked in an oven at 150 degrees Celsius for 5 minutes to restore its crispness.

To make crispy peanuts, fresh and plump seasonal peanuts should be selected, as moldy peanuts can produce aflatoxin. Daily consumption should not exceed 30 grams per time to avoid excessive intake of fats. hypertension patients can use air frying pan to bake with less oil, and diabetes patients are advised to choose the original sugar free version. Eating vegetables rich in dietary fiber such as celery and carrots together can help balance fat absorption.
