The key steps include processing live crabs, controlling the heat, and pairing with ginger vinegar or sauce. The classic way to steam crabs is to wash the live crabs clean, place them in a steamer with their belly facing up, and avoid the loss of crab roe. Steam over high heat for 8-10 minutes after the water boils. Once the crab shell turns red, it can be taken out of the pot. The dipping sauce is made by mixing ginger powder, vinegar, and a little white sugar, which can neutralize coldness and enhance freshness. If you choose to stir fry, you need to cut the crab into pieces and wrap them in thin starch. Heat oil and stir fry the scallions, ginger, and garlic, then add wine and soy sauce and stir fry quickly. Finally, sprinkle cilantro to enhance the aroma. Both methods require attention to keeping crabs fresh, as dead crabs can easily produce histamine and cause poisoning. Frozen crabs need to be thoroughly thawed before cooking, but their taste is slightly inferior to live crabs. It is recommended to use scissors to cut off the crab gills and stomach pouch during processing, as it is easier to taste when cracked with crab claws. Paired with yellow wine or perilla leaves, it can drive away cold and should not be consumed excessively by those with weak digestive system. Crabs are rich in high-quality protein and trace elements, but they are not suitable for consumption on an empty stomach due to their cold nature. It is recommended to pair with warm ingredients such as ginger and perilla, and avoid eating them with persimmons and strong tea. People with allergies need to undergo a small amount of testing on their first attempt, and ensure thorough heating during cooking to kill parasites. The remaining crab meat can be taken out to make crab roe tofu or Fried Rice to avoid waste.
