How to distinguish the authenticity of jujube nectar

The authenticity of jujube nectar can be distinguished by observing its color, smelling its aroma, tasting its taste, observing its crystalline state, and detecting its viscosity. Jujube nectar is honey brewed from honey collected by bees from jujube trees, with a unique deep amber color and rich jujube fragrance. There are counterfeit or artificially synthesized products in the market.

1. Observe the color

The nectar of jujube flowers appears dark amber or reddish brown, with weak translucency and uniform color, and moderate fluidity when shaken. Fake jujube nectar may have overly bright or dark colors, abnormal transparency, and some products mixed with syrup may exhibit layering or turbidity. Natural jujube honey contains pollen and minerals, and there may be slight sediment at the bottom.

2. Smell

Jujube nectar has a distinct jujube flower fragrance, with a slight caramel and Chinese herbal aroma, and a mild and long-lasting scent. The false jujube nectar may have a pungent or too sweet and greasy aroma. Some products using essence have a single odor and volatilize quickly. Under low temperature environment, the aroma of true honey will weaken but will not disappear, while the odor of artificial essence is easy to change with temperature.

3. Taste

The honey of jujube fruit is sweet and smooth in the mouth, with a slightly sour aftertaste and a slight astringency. There is a warm sensation in the throat. The sweet taste of fake jujube nectar is abrupt and short-lived, possibly accompanied by the metallic taste of saccharin or the astringency of alum. When real honey dissolves in water, it forms filamentous sinking, while fake honey may dissolve quickly or produce flocs.

4. Observing the Crystallization Status

Jujube nectar will form delicate and soft milky white crystals at low temperatures, with uniform and easily twisted particles. Fake jujube nectar may exhibit non crystallization, hard crystallization, or layered crystallization. When mixed with malt syrup, fake honey crystals appear in coarse granular form. True honey still retains its original aroma after crystallization, while false honey will significantly reduce its odor after crystallization.

5. Testing viscosity

True jujube nectar has a moderate viscosity, and when dropped on a tissue, it penetrates slowly and has neat edges, with a long and thin wire that is not easily broken. Fake jujube nectar may be too thin or thick, and after dripping, it quickly spreads or remains raised. When lifted with chopsticks, real honey falls back and forms folded ripples, while fake honey drips in a straight line.

When purchasing jujube honey, it is recommended to choose products from legitimate channels, pay attention to checking product testing reports and ingredient lists, and avoid purchasing products with prices significantly lower than the market price. Jujube nectar is rich in glucose, fructose and mineral elements. Proper consumption will help to supplement energy, but diabetes patients and infants need to eat it carefully. When storing, it should be placed in a cool and dry place, avoiding direct sunlight and high temperature environment. It is recommended to consume it within six months after opening to maintain the best quality.
