How to deal with moldy corn

When corn is slightly moldy, it is recommended to discard it directly. The moldy part may contain harmful substances such as aflatoxin. The main methods for treating corn mold include thorough disposal, inspecting the surrounding corn, avoiding ingestion, paying attention to storage conditions, and observing physical reactions.

1. Thoroughly Discard

When corn is found to have mold or odor, it should be discarded whole and the moldy part should not be removed before consumption. The fungal hyphae may have spread to the non moldy area, and aflatoxin is heat-resistant and insoluble in water, which cannot be removed by ordinary cleaning and cooking. Moldy corn may cause acute poisoning or long-term carcinogenic risks, with particularly severe liver damage.

2. Check the surrounding corn

Adjacent corn in the same storage environment should be checked one by one, as the spores of moldy corn may contaminate surrounding food. Mild mold spots may appear as green, black, or white flocculent substances, accompanied by a damp and sticky feeling. When storing corn, gaps should be left between them to avoid stacking and causing local moisture to accelerate mold growth.

3. Avoid accidental ingestion

Moldy corn is more difficult to distinguish after grinding, and purchasing corn flour products should choose legitimate channels. Eating moldy food by mistake may cause symptoms such as nausea, vomiting, abdominal pain, and diarrhea, which can be accompanied by jaundice or liver pain in severe cases. Special populations such as pregnant women, children, or those with low immunity need to be more cautious.

4. Pay attention to storage conditions

The storage humidity of corn with bracts should be controlled below 65%, and it is recommended to refrigerate and consume the corn within 3 days. Dried corn kernels should be sealed and stored, and food desiccants can be placed to prevent moisture. It is recommended to hang corn in a ventilated and cool place in the hot and humid environment of summer.

5. Observe physical reactions

After ingesting a small amount of moldy corn, drink sufficient warm water to promote metabolism. If discomfort persists within 24 hours, seek medical attention. Long term exposure to moldy grains may increase the risk of liver cancer, and it is recommended to undergo regular liver function tests. Containers for storing grain should be regularly disinfected and dried to avoid residual mold spores.

It is recommended to choose intact and undamaged fresh corn for daily storage, and use a fresh-keeping bag to isolate moisture when storing in refrigeration. Dry corn kernels can be frozen and stored for 3-6 months. Before consumption, check for clumping or discoloration. Toxins produced by moldy food may affect infants and young children through the placenta or breast milk, and lactating women should pay special attention to dietary safety. If the storage environment is found to be humid, quicklime or bamboo charcoal bags can be used to adjust the humidity and avoid cross contamination with other foods.
