How to clean Yangmei without affecting its taste

The key to cleaning waxberries thoroughly without affecting their taste is gentle handling and soaking in salt water. There are five main methods: rinsing with running water, soaking in salt water, adsorbing starch, cleaning with baking soda, and sterilizing with white vinegar.

1. Rinse with running water

Place the waxberries in a fine strainer and rinse repeatedly with running water for 2-3 minutes. Control the water flow pressure below 0.2 megapascals to avoid damage to the fruit pulp. Gently shake the strainer during rinsing to help remove surface dust. This method is suitable for fresh bayberries with high surface cleanliness and can preserve intact fruit powder.

2. Soak in salt water

Prepare a 3% concentration salt solution and soak Yangmei for 8-10 minutes. Salt can promote the precipitation of fruit fly larvae and inhibit oxidase activity to prevent browning. After soaking, rinse with cold water once to avoid residual salty taste. This method has a significant effect on removing insect eggs and does not damage the cell structure.

3. Starch adsorption

Add 5 grams of corn starch to clean water and stir well. Add Yangmei and gently stir for 3 minutes. Starch molecules can encapsulate impurities and settle, making them particularly suitable for removing pesticide residues. The processed waxberries need to be rinsed with pure water, and the starch film will dissolve in water without affecting the flavor.

4. Baking soda cleaning

Dissolve 3 grams of edible baking soda in 1 liter of water, soak the waxberries for 5 minutes, and then rinse quickly. Alkaline environment can decompose fat soluble pesticides, but prolonged exposure can cause fruit pulp softening. Suggest soaking in ice water for 1 minute to restore brittleness.

5. White vinegar sterilization

Soaking in a 5% white vinegar solution for 2 minutes can kill surface microorganisms, and the acetic acid evaporates without leaving any odor. This method is suitable for ready to eat scenarios and does not require secondary rinsing after processing. Pay attention to controlling the concentration to avoid excessive penetration of fruit acid that affects sweetness. After cleaning, the waxberries should be immediately drained of water and spread flat on absorbent paper to dry in the shade. Avoid direct sunlight or vigorous wiping, and it is recommended to use a breathable container when storing in refrigeration. If the flesh is found to be oozing juice or becoming soft, it can be made into yangmei sauce or chilled drinks. Choosing eight ripe fruits has the best cleaning effect, and over ripe waxberries are recommended to be processed before consumption. Daily consumption should be controlled within 150 grams per day, and individuals with gastrointestinal allergies should reduce their consumption on an empty stomach.
