How to clean pig stomach more thoroughly

The key to cleaning pig stomach thoroughly is to completely remove mucus and impurities, which can be achieved by methods such as flour scrubbing, soaking in white vinegar, and blanching in boiling water.

1. Flour Rubbing

Sprinkle dry flour on the inside and outside of the pig's belly and rub repeatedly. The adsorption of flour can effectively remove surface mucus and oil. Pay attention to the wrinkled areas during scrubbing, and rinse with running water until there is no flour residue. This method can remove most of the fishy substances and is suitable as a preliminary cleaning step.

2. Soaking in White Vinegar

Soak pig stomach in a mixture of white vinegar and water in proportion. An acidic environment can decompose residual mucus and kill bacteria. The soaking time should be controlled at around twenty minutes, as prolonged soaking may affect the meat quality. After processing, rinse with clean water multiple times to avoid residual vinegar odor. This method has a significant effect on removing odors.

3. Blanch in boiling water

Put the preliminarily cleaned pork belly into boiling water and blanch it quickly. High temperature can solidify the residual mucus for easy scraping. The blanching time should not exceed one minute. After removing, immediately scrape and wash the inner wall with the back of a knife. Pay attention to controlling the water temperature, excessive heating can cause the meat to shrink and affect the subsequent cooking taste.

4. Rubbing salt

The physical friction of coarse salt particles can deeply clean the crevices of pork belly. Apply salt evenly and rub the inner and outer walls vigorously, paying special attention to the area connecting the intestines. Salt can also penetrate and kill bacteria. After completion, rinse with plenty of water to avoid excessive saltiness. This step is recommended to be performed after washing the flour.

5. Starch Adsorption

Using potato starch or corn starch instead of flour for secondary cleaning, the fine texture of starch can adsorb even smaller impurities. Mix starch and water into a paste and apply it to pork belly. Let it stand for a moment and then brush it thoroughly, especially suitable for treating the surface of pork belly that has been preliminarily cleaned but still appears smooth.

It is recommended to cook the cleaned pork belly as soon as possible. If it needs to be stored, it should be drained and refrigerated for no more than two days. During the processing, pay attention to separating raw and cooked to avoid cross contamination. All utensils that have come into contact with raw pork belly must be thoroughly disinfected. Regular consumption of pork belly can supplement high-quality protein and trace elements, but high cholesterol individuals should control their intake. Stewing with ingredients such as yam and lotus seeds can enhance nutritional value. For those with spleen and stomach deficiency and cold, it is recommended to add ginger for blending.
