How to best preserve peanuts

It is best to store peanuts in sealed refrigeration to effectively prevent mold and oxidation deterioration. The main preservation methods include vacuum packaging, refrigerated storage, frozen storage, desiccant assisted, and light shielded storage.

1. Vacuum packaging

Put peanuts into a food grade vacuum bag, evacuate the air and seal it, which can isolate oxygen and moisture. Under vacuum conditions, it can inhibit the growth of Aspergillus flavus and can be stored for a long time at room temperature. Pay attention to choosing a vacuum bag with moderate thickness to avoid piercing the packaging with sharp peanut shells.

2. Refrigerated storage

Put peanuts into a sealed container and place it in the refrigerator compartment, with the temperature controlled at around 4 ℃. Low temperature environment can delay fat oxidation and maintain a crispy taste for about 3 months. Before storage, it is necessary to ensure that the peanuts are completely dry, and kitchen paper can be placed inside the jar to absorb condensed water.

3. Frozen storage

Divide into small portions and place them in a sealed box for freezing. Freezing at -18 ℃ can store for more than 1 year. Freezing can completely inhibit fungal activity, but the taste is slightly softer after thawing. It is recommended to use it directly for cooking without thawing, to avoid repeated freeze-thaw damage to cell structure.

4. Desiccant Assistance

Place food grade silica gel desiccant in a sealed container to absorb excess moisture from the environment. It is advisable to mix 10 grams of desiccant for every 500 grams of peanuts, and regularly replace the discolored desiccant. This method is suitable for storage at room temperature in humid areas and requires monthly inspection for mold growth.

5. Store in dark place

Use opaque ceramic jars or dark glass bottles to prevent light from accelerating oil spoilage. Keep in a cool and ventilated place, away from heat sources such as stoves. It can be stored together with natural insect resistant spices such as Sichuan pepper and cinnamon, which can not only repel insects but also add flavor.

Fresh peanuts should be selected from high-quality products with full and moldy grains, and stored in a shell for better durability. It is recommended to consume the dehulled peanuts within six months and regularly check for any rancid or moldy taste. Soak and rinse before cooking, high-temperature baking or deep frying can further reduce the risk of aflatoxin. Special populations such as infants, young children, and pregnant women should strictly control their daily intake within 20 grams to avoid excessive consumption and digestive disorders.
