After harvesting, the respiration of green beans is vigorous. If not cooled in time, it will accelerate water loss and nutrient decomposition. 0-4 degrees Celsius is the most suitable pre cooling temperature range for soybean, which can effectively slow down soybean metabolism and inhibit microbial reproduction. The pre cooling treatment time usually takes 2-4 hours, depending on the initial temperature of the beans and the performance of the cooling equipment. During the pre cooling process, attention should be paid to maintaining environmental humidity to prevent the beans from wilting due to dehydration. Using methods such as vacuum pre cooling or cold water pre cooling can achieve the target temperature faster. If the temperature is below 0 degrees Celsius, the beans may suffer from cold damage, manifested as surface depression, browning, and other frostbite symptoms. When the temperature is above 7 degrees Celsius, it is difficult to effectively suppress respiration and the preservation effect significantly decreases. In special circumstances, if there is slight damage to the beans, the pre cooling temperature can be appropriately reduced to 0-1 degrees Celsius, but the time should be strictly controlled not to exceed 2 hours. There are differences in low temperature tolerance among different varieties of beans, with long beans being more susceptible to low temperatures than short beans.

After the beans are cooled, they should be transferred to a refrigerated warehouse as soon as possible to maintain a temperature of 4-7 degrees Celsius and a relative humidity of 90% -95%. Regularly check the status of the beans during storage and promptly remove any rotten individuals. During transportation, refrigerated trucks are required to ensure stable temperature. For home storage, green beans can be wrapped in plastic bags and placed in the refrigerator compartment to avoid mixing with fruits such as apples and pears that release large amounts of ethylene. Proper pre cooling can extend the shelf life of green beans to 7-10 days, maintaining good product characteristics and nutritional value.
