How many degrees are best to preserve grapes

The optimal storage temperature for grapes is 0-4 degrees Celsius. The preservation effect of grapes is mainly affected by factors such as temperature, humidity, ventilation conditions, maturity, and variety characteristics. Grapes can effectively inhibit respiration, delay water loss and sugar conversion in an environment of 0-4 degrees Celsius. Low temperature environment can reduce pectinase activity, maintain fruit pulp compactness, and inhibit mold growth. Most fresh grape varieties can be stored for 7-10 days within this temperature range, and the stems can maintain a fresh green state. It should be noted that early maturing varieties are more sensitive to low temperatures, and the storage temperature can be appropriately increased by 1-2 degrees Celsius. Some seedless varieties with thin skin are prone to frost damage at temperatures below 0 degrees Celsius, resulting in translucent water stains on the skin. Over ripe grapes are prone to shedding during refrigeration, and it is recommended to harvest and store them at a maturity of 8 minutes. Thick skinned varieties such as Jufeng can tolerate short-term low temperatures of -1 degree Celsius, but long-term storage still needs to be maintained above 0 degrees Celsius. Modified atmosphere storage can control oxygen at 2-5% and carbon dioxide at 3-5%, further extending the shelf life.

When storing grapes, it is recommended to use perforated fresh-keeping bags to prevent condensation from accumulating. Remove damaged fruit pieces before storage and regularly check for mold growth. Different varieties should be stored separately to avoid mixing ethylene sensitive varieties with fruits such as apples that release large amounts of ethylene. Take it out and warm it up 2 hours before consumption to better showcase the activity of flavor compounds.
