Fresh mushrooms can generally be stored for 1-2 days at room temperature, and the actual storage time is affected by factors such as mushroom type, environmental humidity, ventilation conditions, maturity, and whether pre-treatment is required. Fresh mushrooms are prone to spoilage at room temperature due to water loss and microbial growth. Unclean intact mushrooms have a longer storage time than cut mushrooms because the cut will accelerate oxidation and bacterial invasion. When the ambient temperature exceeds 25 degrees Celsius, mushrooms may experience softening, stickiness, or discoloration within a day. Thick fleshed varieties such as Agaricus bisporus are relatively resistant to storage, while slender varieties such as Flammulina velutipes are more prone to dehydration and wilting. Place the mushrooms in a cool and dark place, avoid sealed plastic bags, and use breathable paper bags or gauze to cover them. This can extend the storage time by about half a day to a day. Some special varieties of mushrooms, such as shiitake mushrooms, release spores during the maturation process after harvesting, causing the cap to quickly open and the texture to become tough. These mushrooms are usually stored at room temperature for no more than 24 hours. If obvious mucus, sour taste or dark spots are found on the surface, it indicates that decay has occurred. In the high temperature and high humidity environment of summer, the storage time of all fresh mushrooms at room temperature will be shortened to less than 12 hours, especially mushrooms that have been transported and squeezed are more prone to mold growth. Wild mushrooms may carry more environmental microorganisms without artificial screening, and their decay rate at room temperature is usually faster than that of cultivated varieties.

It is recommended to refrigerate fresh mushrooms as soon as possible after purchase, wrap them in kitchen paper, and place them in a breathable container to extend the shelf life to 3-5 days. Check for any odor or texture changes before cooking to avoid consuming spoiled mushrooms. For mushrooms that are temporarily not edible, freezing or drying treatment can be considered, but it may alter the taste and nutritional structure. Regularly cleaning storage containers and keeping the refrigerator humidity at around 90% can maximize the freshness and nutritional value of mushrooms.
