The shelf life of iron stick yam is usually 3-6 months, and the actual storage time is affected by factors such as storage environment, whether it is intact with skin, processing method, temperature and humidity, and whether it has sprouted.

1. Storage Environment
Unopened dry iron rod yam can be stored for a long time in a cool and ventilated place. If the environment is humid or in contact with moisture, it will accelerate mold growth. It is recommended to store in cardboard boxes or mesh bags to avoid water vapor condensation caused by plastic bag sealing. When storing in refrigeration, it is necessary to wrap it in kitchen paper to absorb condensed water and prevent the skin from sticking and rotting.
2. Skin integrity
Yam with intact skin has a shelf life that is more than twice as long as that of peeled yam because the outer skin contains natural antibacterial ingredients. Yam with damaged skin is prone to oxidation, blackening, or mold growth at the wound site. After cutting, wrap the incision with plastic wrap and consume as soon as possible.
3. Processing Method
Dried yam slices can be stored for more than 12 months under sealed and moisture-proof conditions, while fresh cut yam strips can maintain their taste for about 2 months when frozen. Vacuum packaged yam can extend its shelf life to 8 months by isolating it from oxygen, but it still needs to be refrigerated and consumed within a week after opening.

4. Temperature and humidity control
A constant temperature environment of 10-15 ℃ is most suitable for storing fresh yam. Temperatures exceeding 20 ℃ can accelerate starch saccharification and cause hollow deterioration. Maintaining a relative humidity of around 60% is optimal. Excessive dryness can cause dehydration and wrinkling of yam, while high humidity can easily lead to mold growth in the root and whisker areas.
5. Germination Status
Although sprouted yam does not contain toxins such as solanine, the sprouts consume nutrients from the tubers, leading to lignification, a woody taste, and decreased nutritional value. When 1-2 cm short buds appear, the bud eyes can be removed before consumption. If the bud body exceeds 5 cm or is accompanied by mold, it is not recommended to continue consumption.

It is recommended to regularly check the condition of yam and discard it immediately if there are black spots, mucus or sour taste on the skin. Short term storage can be wrapped in newspaper and stored in a cool place. For long-term storage, it is recommended to slice and sun dry or vacuum freeze. Observe the cross-section before consumption. It is best for the meat to be white and firm, and if it turns yellow and loose, it has deteriorated. When stewing with ingredients such as Job's tears and lotus seeds, priority should be given to using fresh yam to ensure the active ingredients of mucin. Special groups, such as diabetes patients, should pay attention to controlling their intake to avoid affecting blood sugar fluctuation after starch conversion.
