How long can fresh eggs be stored at room temperature in winter

Fresh eggs can generally be stored at room temperature for 15-30 days in winter, depending on factors such as humidity, temperature fluctuations, eggshell integrity, cleanliness, and whether they have been cleaned. When eggs are stored at room temperature in winter, the low temperature environment can slow down the growth rate of bacteria, and the natural protective film on the surface of unwashed eggs can block microbial invasion. If the ambient temperature remains below 10 degrees Celsius and the humidity is moderate, the shelf life of eggs can be close to 30 days. When storing, it is recommended to place the tip of the egg facing downwards to avoid contact between the yolk and the chamber, and to keep it away from foods with odors to prevent penetration. If the egg is washed with water or if the shell cracks, the protective film is damaged and bacteria are prone to invade, the shelf life will be shortened to 7-10 days. The high temperature or humid environment in summer will accelerate deterioration, and if there are phenomena such as yellowing and sticking shells, they should be discarded immediately. After purchase, the size of the air chamber can be checked by lighting. If the air chamber exceeds 5 millimeters, it indicates a longer storage time.

In winter, eggs can be stored in a cool and ventilated place, avoiding direct sunlight or close to radiators. Regularly check the condition of the eggshells, and before cooking, put the eggs in salt water to test their freshness. The ones that sink are preferred. If long-term storage is required, it is recommended to clean and apply edible oil, seal and refrigerate, or make pickled eggs to extend the shelf life to more than 3 months. However, hypertensive patients should control their intake.
